I don’t think HR is ever on your side. I got written up for something that was beyond my control and Corporate HR didn’t care.

A strong case for constructive dismissal would be when the employer moves you to a different location that is further away. This could occur even if the organization itself doesn't move i.e. county government jobs that move you to one of their other locations. The employer might even be deceptive enough to characterize your movement as a "new assignment" without a formal transfer process and then claim you have to wait a certain period to formally transfer back to where you came from or somewhere else. Of course, all you should need to do is question and document the so called reassignment and see what kind of glib answer you get such as the supervisor saying well I'm am stuck in my current assignment also which usually isn't true either such as where the supervisor was sent there to reopen a previously closed location to the public which much to everyone's surprise never happens . . .

Question: if you’re written up for not averaging 14 units sold /month (minimum told to you when hired was and has been 7) then 2 weeks later they make you sign a paper saying company policy states new minimum is 14 amongst similar actions fall under this ?

I'd just spend my day at work looking for other jobs in this circumstance. Unless it's something life threatening, free money until I find it. Why not?

It’s a criminal case , harassment , defamation of character , theft , felony

What if I stated but issues aren't addressed > you ask to resign and send a letter > they won't let you resign until you "input it into Workday" (the system they use) and the ONLY option is "Voluntary?"

You have rights, depending on what State you’re in. The Employer may be liable for penalty fees for making you wait

I got hurt at work broke my calcaneus in 2019. For 3 years I was off and on of workers comp. QME doctor said I was 16% disabled and gave me restrictions of 4 hours per shift can work 5 days a week and additional restrictions as well. HR and I with a 3rd party present for a accommodation interview said they can accept my accommodations and place me back into the system. I was supposed to return for work on August 2nd which my boss was informed a week before August to put me on the schedule. I wasn't on the schedule for that week. Next week he gave me two days and thus week no hours. I message my assistant manager and with negative attitude he said he doesn't know which that's a lie they get a timesheet for the next week. So I called the store manager he said he thought he put me on there which again that's a lie. He then turns around saying it's slow. Without arguing I just said I understand and hung up. I don't know what to do at this point.
