Welcome to shopping with Dr. Ekberg. I'm just going to talk a little bit about oils today. So for the last 50 years all we have ever heard is that saturated fats are bad and all the unsaturated fats are good. Well it's not quite that simple. The other thing we've heard is that vegetable fats are good and animal fats are bad, and that's not true either. What is true is natural fats are good for you and processed fats are bad for you. Another distinction we want to make when it comes to oils is the ratio of omega-3 to omega-6s. Omega-3 oils are truly vegetable oils. Those are anti-inflammatory whereas omega-6 oils are pro-inflammatory and all the oils that we typically call vegetable oils are actually not vegetable oils. They're seed oils and grain oils such as soy, corn, and canola. Those are not vegetables they are omega-6 oils and therefore pro-inflammatory. So we want to base our consumption on vegetable which means things like avocado and olive. Another great choice is a coconut oil because even though it is saturated it is extremely healthy. It contains, a very large, as much as 60% of medium chain fatty acids that are excellent sources of energy and that create no inflammation at all. So this would be the worst of the worst this is what they call a vegetable but it's actually made from beans and then it's shortening which means that they have had hydrogenated it. This is pure poison it is right up there with pesticides and heavy metals in terms of toxicity. It screws up your cell membranes interfering with everything in your body. Then we have the second worst which is extremely cheap highly processed soybean oil. We want to definitely stay away the pro-inflammatory & they're not really good for anything. Same thing with corn oil extremely highly processed. Corn oil has to be extracted with solvents. It tastes terrible so they have to bleach it & take every form of nutrients & flavor out of it before they can use it. That's why these things are so cheap. Then we have something called vegetable oil & then when we look what it is we see soybeans so again it's not a vegetable oil. It's a from a legume.

Think of a paleo diet....did humans evolve over 100,000 years eating lots of oil? Animal fats yes. Processed corn oil, NOOOOO. Did they eat a lot of grains? Hardly none to zero. Have they evolved enough during the start of the grain-eating era? Around 4-5000 years ago? Well, some of us have. We are the ones that do not have clogged arteries, heart disease, diabetes and more. If you look at the obesity/diabetes ratio in western countries, obviously only about 20% of us humans have evolved to eat SOME grains. One thing that we have NOT evolved to eat, is sugar. It's a deadly, slow acting poison to us humans.

If it is sold in that big bottles and if it is that cheap you can be pretty sure that is NOT "extra virgin olive oil". It may not contain olive oil at all or it is a mixture of some olive oil and other oils with special additives to make it look and taste somehow like olive oil. Luckily for them, most Americans have no idea how real extra virgin olive oil tastes like. It is quite a challenge to get real quality extra virgin olive oil in US, and lately it is becoming challenging in Europe too. PS: Italy exports about three times more "Italian" olive oil than it produces. They are buying massive quantities of olive oil from Greece, Tunisia, Turkey, then process (by adding colouring and flavour to look and taste like extra virgin olive oil, then export it, in large quantities. It is said that pretty much of the olive oil trade is controlled by the Italian and American Mafia.

I agree with you Dr. Ekberg on everything you’ve said about the oils but, how about mentioning something about the toxicity of polymer food containers versus glass food containers ? Take, for example, the wonderful organic olive oil packed in those polymer (plastic) containers, which may be free of pesticides, herbicides and maybe genetic modification, but full of synthetic estrogens from the polymer packaging. No food should come in contact with anything ,plastic’ ! Glass and ceramic as much as possible, but definitely no plastics !

@johnatyoutube
@johnatyoutube 6 ай бұрын
@@alwaysgr8fl You put it in a glass bowl in gently simmering water in a large saucepan - a double boiler. If you get the right size bowl for your pan, it will just perfectly sit in it. You have to keep the water at a very low temperature for this method at just the melting point of the butter, but it's the simplest. Other methods involve filtering. Don't boil the water, be patient, and you'll be fine. Once all the butter melts, wait for it to separate (solids will be on the bottom), then you skim the clarified butter (oil) off the top with a shallow ladle and put it into a large pyrex measuring cup. It takes about 30-60 minutes for the entire process. You'll know when it's ready when you see two distinct layers in the bowl with the oil at the top. After you've ladled off all the oil into the measuring cup, pour it slowly into silicone butter stick molds that you can buy online and put them in the refrigerator. Put them on a firm tray like a cookie sheet as you fill them so that they don't collapse and spill when you move them. (Don't throw the solids down the drain - they will clog your pipes. Put them into a separate jar that you can throw away after it hardens.) Once the oil hardens into butter sticks in the molds, you remove the now clarified butter sticks from the molds and store them in a container and use them just like butter. We put each stick we make in a butter dish. You'd never know the difference. It tastes MUCH better and is cheaper than store bought ghee. And, if you make a lot, you can freeze some. It's really easy.

Informative thank you. I like the fact you give the smoking temperatures. Many people do not realise that when oil smokes it breaks down its structure and can become harmful. I use several oils for different applications. I need a truthful chart to compare all oils to find the healthy ones. I've recently ditched rape seed oil or canola. I use coconut oil, peanut/groundnut oil p as high temp (wok) cooking oil, sesame in small quantities for Chinese dishes, goose fat for roast potatoes. I've ditched grape seed, sunflower seed and vegetable oil. I also use tall cut from shoulder joints. Olive oil for salads. But.... I save the best till last - Dolphin oil is sublime! Ps Just joking!

For olive oil, I will add that not only should it be organic, extra virgin but also of cold extraction and not blended from many different countries, but only from one country! Greek olive oil along with Italian are the best, followed by Spanish olive oil.

The other point to make is that it's better to buy oils that are stored in glass and not plastic (aluminum/can foods usually have plastic wax coating as well), generally true for most foods. Definitely worth the cost if you will be storing the food or oils for an extended period of time. The chemicals in the plastic can leach overtime into foods that are stored in plastic, especially if exposed to sunlight. BPA free doesn't mean much when there are literally over 50 other common chemicals used in food-grade plastics that react with acids and bases and are not stable when exposed to heat or UV rays from sunlight. If you must store food in plastic, make sure it is not heated above room temperature and is kept in dry place away from direct sunlight or UV rays, even if the plastic says “microwave” or “dishwasher” safe.

Frying is what creates a problem with coconut oil. To get the health benefits you say it has, you have to cold press it to get VCO or centrifuge coco milk to get the oil. This method does not rid the oil of its coconut smell and taste. So if you fry anything with virgin coconut oil it will leave a coconut flavor/smell. To get the coconut smell/taste out of this VCO we'd have to refine it; i.e, use steam/heat w/c would destroy the healthy nutrients in it or use chemical solvents w/c will destroy the healthy nutrients in it and introduce chemicals into the oil. Ergo, its almost the same as the seed oils if you want your fried food to have a neutral taste. However VCO ingested as a tonic or VCO used as a butter substitute in baking I absolutely agree is the healthiest plant oil.
@drekberg

Thank you Ron Bunggo. You're exactly right. In order to get a flavor neutral oil, you have to refine it and "ruin" it.

In Norway we have a oil called "Vita" This suppose to be a good oil for the hart and our health. 60% CANOLA oil , 25% SUNFLOWER oil , 15% OLIVE oil. The perfect combination of oil for the hart they promise. Our organization for people with heart problems here in Norway (NHL) put the logo on the bottle. NHL recommend this product.... I have been fooled until today it seems like. Thanks for good information that can help us understand and learn.
