Ganache quantities for covering a 6 inch 2 layer cake (increase the quantity for larger cakes):
White chocolate ganache (3:1 ratio):
- 600g white chocolate
- 200ml of heavy cream
- Gel food colouring of choice for colouring
Dark chocolate ganache (2:1 ratio):
- 800g dark chocolate (50%). The darker chocolate you use, the more cream you will need to add.
- 400ml of heavy cream

Hi!! I'm thinking about trying to cover a cake with this ganache (I normally use swiss meringue buttercream), but I'm wondering...is it soft to cut? I'm afraid that it turns kinda hard, like a hard chocolate,idk😅 and thank you for sharing these recipes with us

Hi there! So if you leave it at room temp (so pull it out of the fridge a few hours before you're going to eat it) it will soften up and will be easy to cut :)

@@CakesbyMK thank you so much for answering! I will definitely try it out for my daughter's birthday cake. It will probably be a black cake so I think it's easier to get a black color through a dark chocolate ganache instead of coloring a buttercream. I'm sure it will be a success ;)

If you're waiting for the ganache to set then at room temp :) but for the decorating process you want to fridge the crumb coat and final coat :)

I always use chocolate you would eat (not baking chocolate), so Cadbury, Whittaker's etc. :)

Heya! To prevent overflow make sure you're only filling your cake tin up to 3/4s of the way up to give the cake space to rise :)
