SAINT LOUIS, SENEGAL - Today we’re cooking and eating one of the most popular Senegalese foods, known as poulet yassa, or just yassa. It’s a dish of, in this case chicken, with onions and mustard sauce. You’ll find it all over Senegal and all over the world now, but originally from Senegal. It’s an amazing dish, so simple, and yet so tasty. We’re going to see the entire cooking process, and then be able to eat another amazing meal in Senegal, West Africa!
Thank you to Diana for hosting us at her amazing restaurant in old town of Saint Louis. We started with a whole local chicken, cut down and then fried in oil. The chicken was then combined with a huge bucket of onions, mustard, and a bunch of seasoning and and spices and served with rice. Again, poulet yassa is a dish that you’ll find throughout Senegal, it’s one of the most common dishes. I think it’s easy to make and it’s a food that everyone - young and old and enjoy. I was surprised at how tasty it is!
From Saint Louis we continued on this food tour to the amazing sand dunes of the Lompoul Desert of Senegal. The dunes were beautiful, we rode camels and then we ended with a local couscous dinner at the Lompoul Ecolodge. Dinner was delicious, and the local drumming was incredible - a great way to end the evening.
And that completes another delicious day, eating Senegalese food in West Africa!
Thank you to Pape Tatandiaye (Visit Senegal / papetatandiaye )

As a Senegalese living abroad, Yassa is my go to dish when I want to impress non-senegalese friends. It is sooooo easy to make and everyone has the same reaction as mark's tasting it, it's always so satisfying to see as cooking is my love language! I don't do my Yassa exactly like this, I prefer the "healthier" option of roasted chicken rather than fried. I normally put in the mustard as I fry the onions but I'll definitely add it later on from now on, the texture and color looks so much better. And baobab juice is everything, and yes it's pure vitamin C, and has so much health benefits 💕 This video is awesome and made me nostalgic of my home country, can't wait to go back!

Such wonderful Yassa! I love Senegalese food: 5:21 "Bismillah-ir-Rahman-ir-Rahim (The prayer in Islam to behing any task, which is said in Arabic: "in the Name of Allah, the Most Gracious, the Ever Merciful".) Senegal is a predominantly Muslim country, and Islam has a big effect on their culture, food, and mentality too. Most of West Africa is Muslim, except the southern 1/3 of Nigeria, the southern 1/2 of Ghana, and some of the other southern halves of the coastal states between there and Liberia. Its one of those places people don't seem to associate with Islam in the West or Far East, but its very much part of the Muslim World.
