It's interesting to see what's available fresh in different parts of the world, at different times. Here in May, we have asparagus, fiddlehead fern, some early varieties of carrots and onions, early potatoes, peas, spinach. Definitely no fruits until July. What we DID have a few weeks ago was snow, and it's not uncommon to get snow in May, so you can see why fruits are much later in the season. 😊

I know, it's so interesting how much it varies. I tried to list ingredients that were available in most places, but there definitely is a ton of variability from location to location.

Thanks for yet another informative video! I love lemons in my tossed, mixed salad - sliced thinly and then chopped up (with peel), some olive oil, salt and pepper - yum! You can even cut the pips off your grilled corn and toss that in as well - double yum! Have you tried to add beets to smoothies? Makes a beautiful pink mix and tastes pretty good.

I love mushrooms, and eat them every single day. So much so that I grow gourmet culinary mushrooms myself, because I can get much more variety, and it ends up being much cheaper. In fact I'm eating the last of the elm oysters that matured a couple of days ago. Delicious!

Hello! I love your videos so much, especially that you eat dairy, as it's one of my fave things and it's so versatile! I was wondering what your opinion is on Neu5Gc. I've been hearing about it being a carcinogen and since it's in dairy, it makes me so sad!

The acidity of lemon also cuts down the richness of foods. For instance, drizzle lemon juice on top of your steak or salmon or any meat or fish you fancy eating. I have a delicious recipe for green beans, blanch them in salted boiling water for a couple of minutes and then sauté them in olive oil and serve with crushed hazelnuts and peanut butter. Artichokes is one of those few vegetables I buy frozen, since I have no knowledge of which to pick fresh from the market, my mother knew which ones were best and I am not into preparing them. Spinach and lettuce are also top notch at this time of year I alter among these two and apart from springtime I buy frozen spinach the rest of the year. Currently where I live it's a bit early for apricots and plums but it's strawberry season and hell yes that's one of my favorite times of the year. Later, I'll opt for plums and cherries as for apricots it's too soon. Speaking of plums, it's the only fruit I like having dried as well, yet I control how much I consume since druid fruit contains lots of sugar. Carrots are a solid option all year round, as for beets it's expensive where I live unfortunately and the same also applies for asparagus and avocados.

I grow pea shoots as a salad leaf, they taste like the pea pod and goes with just about everything, plus they're really quick to grow all year round.

@@AutumnBates all you need is a packet of dried peas from the supermarket, the ones you need to soak over night. Just blanket them on some soil like you might see wheat grass being grown.

Hurray! I can have corn 🌽 every so often. I need to make it a point to eat artichokes more frequently rather than once every four years it’s just one of those things you don’t think about but I do love them. 🍋 I got to remember to use these up before they go bad.

I’m diabetic and just started Mounjaro about a month ago. I have no idea what I’m doing as far as eating correctly. I’m trying chia and steel cut oats and lots of berries. Also avocado on a corn tortilla for lunch. But still suffering from fatigue constipation and stomach ache. What am I doing wrong? I’m so depressed. 😢

Hi Autumn , all those lovely vegetables coming back into season make about 80% of my food . I've never tried cooking green beans directly in a frying pan . I usually steam them then sauté them in a frying pan with a dash of olive oil .But I'll try your way next time . Mushrooms in the air fryer take 10 min to cook , with or wit 8:04 hout a tea spoon of olive oil . 😊

Fermented possibly, pickled no. There's normally a lot of sugar in pickled beets, though you could pickle your own without adding sugar.

For keto? Yes. If you don't care about keto, no. Although if you care about "clean eating", try making your own bread...it's waaay better, especially sourdough 😊👌.

Avocados are very reasonably priced at my local Walmart. To be honest, if you buy fresh produce seasonally, it's supposed to be cheaper because you're actually getting so much less. One tip is to stop buying from the regular supermarket and find a local fruit stand; the prices are usually lower. It's also useful to get fruits from You-pick farms in the summer and put them up, if you can. I don't think Autumn is worried about her budget as much as some of us, but there is certainly a way to buy seasonally on a budget 🤷‍♀️.
