I'm wondering how such a long preinfusion changes what would be recommended as a typical total extraction time. For instance, here you have a 28s shot, which seems pretty normal, but half of that was preinfusion. Subsequently, the puck was only extracted at 9-11bar for 13s. Would such a profile still produce a "typical" espresso (in terms of TDS), or would you need to adjust your shot time (or in terms of this profile, reduce the flow) to account for the long preinfusion and to prolong what is here called the "pouring" part of the shot?

With this profile, I'd aim for about 32s total shot time, and yeah, that will give you a traditional shot in terms of TDS. 28s is just a tad too short.

Now we need to invest a coffee grinder that can measure the grind To the nearest micron. And then preload it with gas to keep it from oxidising.

What's the link for that scale that connects to the espresso machine? Never seen you show that before.

Yeah, sorry, I wasn't clear at *all* in that video, that the scale shown is not yet available. What we do have are the "Skale 2", which does work with the DE1+, and it's quite inexpensive. It's not nearly as nice looking or water-resistant as the Acaia, which is why we're working on making our own model. decentespresso.com/scale Our first attempt (what you see in the video), of working with an existing scale manufacturer, yielded a final prototype that they wanted to charge us US$89 each to make (at quantity=1000, no less). "No thank you" we said, which is why we don't yet have our own scale model to sell. We're going to design it ourselves. It's not a trivial undertaking, though.
