【腸仔包食譜 Sausage Rolls Recipe】(八個 Eight portions)
材料 Ingredients
- 240g 中筋麵粉 Plain flour
- 3.5g 乾酵母 Fast action dried yeast
- 鹽少許 Pinch of salt
- 115ml 牛奶 Milk
- 20g 糖 Sugar
- 2 蛋 Egg (50g) (一隻蛋為掃蛋漿 One for egg wash)
- 20g 無鹽牛油 Unsalted butter
- 8 罐頭香腸 Canned sausages
- 白芝麻 White sesame (非必須 Optional)
做法 Instructions
1. 將乾材料(麵粉,乾酵母,鹽)過篩 Mix and sieve dry ingredients (Flour, dried yeast, salt)
2. 將濕材料(牛奶,蛋)混合,把糖融化進去,倒進乾材料 Mix wet ingredients (Milk and egg) and dissolve sugar, Combine with dry ingredients
3. 將牛油分批揉進麵糰,揉成有彈性的麵糰 Work to elastic dough, adding butter gradually
4. 麵糰發酵30分鐘 Proof the dough for 30 minutes
5. 將麵糰分成八份 Cut the dough to 8 portions
6. 將每份麵糰捲成25cm長圓柱體 Roll each portion to 25cm long, roll horizontally and into a long cylinder
7. 圍繞著香腸卷好,把麵糰尾巴收進去 Wrap the cylinder along the sausage, tuck the end of the dough
8. 發酵30-45分鐘 Proof for 30-45 minutes
9. 刷蛋液和撒上白芝麻 Brush with egg wash and sprinkle sesame
10. 160度焗15-20分鐘,至金黃色 Bake for 15-20 minutes, 160°C until golden brown
【香葱火腿包食譜 Ham & Spring Onion Rolls Recipe】(十個 Ten portions)
材料 Ingredients
- 300g 中筋麵粉 Plain flour
- 3.5g 乾酵母 Fast action dried yeast
- 鹽少許 Pinch of salt
- 80ml 水 Water
- 80ml 牛奶 Milk
- 36g 糖 Sugar
- 30g 蛋 Egg
- 24g 無鹽牛油 Unsalted butter
- 90g 火腿 Ham(切粒 chopped)
- 30g 葱 Spring Onion(切粒 chopped)
- 美乃滋 Mayonnaise
- 車打芝士粒 Cheddar cheese cubes (非必須 Optional)
做法 Instructions
1. 將乾材料(麵粉,乾酵母,鹽)過篩 Mix and sieve dry ingredients (Flour, dried yeast, salt)
2. 將濕材料(牛奶,水,蛋)混合,把糖融化進去,倒進乾材料 Mix wet ingredients (Milk, water and egg) and dissolve sugar, Combine with dry ingredients
3. 將牛油分批揉進麵糰,揉成有彈性的麵糰 Work to elastic dough, adding butter gradually

5. 將麵糰滾成長方形(40厘米 x 20厘米) Roll the dough into a rectangular shape(40cm x 20cm)
6. 將蛋黃醬塗上,並撒上切碎的葱和火腿 Spread the mayonnaise on top and sprinkle the chopped spring onions and ham on top
7. 將麵糰滾成香腸形,然後冷卻 Roll the dough into a sausage and chill
8. 將麵糰切成十份 Cut the dough to 10 portions
9. 發酵30分鐘 Proof for 30 minutes
10. 刷蛋液,可以選擇加車打芝士粒 Brush with egg wash and add cheddar cheese cubes (optional)
11. 180度焗15-20分鐘,至金黃色 Bake for 15-20 minutes, 180°C until golden brown
