yeah, it was myth design to put the US chinese population down, I send links to idiots that disprove every myth and then mention to believe in it is racist, they shut up hahahahahha, I just add the last part because sometimes if I don't they just go on and on and on, with out reading the actual science.

Speaking of recycling the sauce. I made roasted Char Siu pork by marinating it for 24 hours and then roasting it in the oven for an hour, occasionally glazing it with this marinade and adding honey, and then used this marinade to make Char Siu pork sausages. Delicious)

Fantastic as always! 1956 tremendous respect. I was born in Liverpool, my parents when dating always had Chinese cuisine for their 'date nights' Wednesday and Saturday, in the City. Approx 1955. God Bless you my dad.

Lol my dad is amazing :) and in Somerset I've been told they didn't get Chinese takeaway until early 70's! My grandad served Chinese people where my mum is from:)

Tried this tonight with the pork we prepared yesterday, just amazing the pork deep fried tasted different again, and the sauce was perfect!! The stock from the pork has made five generous portions for two which is now in the freezer. Froze the pork on a baking sheet covered and then into a zip lock freezer bag along with another bag of boiled chicken. Now we have the tenderised beef, pork and chicken ready to go!!! evening meals are now a doddle and fun to experiment. Thanks again Choo and Chin!!!

Oooh you two! I’m going to get a more message through to you very soon, but when I see a classic dish like this, delivered in your style of banter and warmth I can’t help but chip in. All the time my Mum was ill and getting worse I must admit I lost my mojo for cooking and studying Chinese cooking, it all became a chore and considering how long I’ve been doing this, I couldn’t get things right. I could mess a bottle of drinking water up! I need to be inspired, and enthusiastic, which shows me quite clearly that I could never be a professional chief. It made me cringe when I saw how full that hot oil pan was on naked flame, it gives me flashbacks to the drunken fish and chip supper I did for a friend. Wow 😳 Lots of love x Dave and Joy, ps, we are hoping to get a different kitchen fitted this year x

it's amazing how a balance of salt, msg (1/3 less sodium than salt), dash of light soy, dark soy, sugar, white pepper, oyster sauce(little bit) and tijade makes a dish so tasty, and it does. scented oils enhance these dishes to become wonderful. warm regards. =)

I’ve always wondered how the takeaways do it (with it being ‘non authentic’ Chinese food it’s difficult to find recipes and techniques). @@ZiangsFoodWorkshop old school dish, but lovely. In fact - I defy anyone to not find something they like off a Chinese menu. The one thing I do find crazy in terms of Chinese takeaway evolution. Crispy chilli beef. I always remember it being really sweet back in the day, no vinegary sour undertones or spicy aftertaste.

@@ZiangsFoodWorkshop I’m 37, so same generation *fist bumps*. Well for me, sounding like a snob here, the restaurant ccb always was the same, it was just takeaway ccb that was always super sweet for me, still ate it. Still loved it, just was a completely different taste. As I’ve got a little older, it’s the sour not of that dish that make it for me. Like the gherkin in a burger, it’s just that delicate touch that makes a good dish, great.

Loving this channel and just ordered the book. a quick question regarding the cooking oil. Many dishes are deep fried and so use a lot of oil. How long can you keep using the oil before discarding it?

yes, but in all honesty, i've never cooked rice in a pan and I don;t think mum has since she was like 11, i don;t know any Chinese people that will use a pan, rice cookers are so cheap, there an essential bit of kit if your serious about oriental cooking :) but will will do a video on rice prep :)

I had no idea "roast pork" was boiled then deep fried. No wonder my roast pork wasn't like the takeaway pork. I was roasting it in the oven. Haha. This dish looks super tasty. Keep watching!

What vegetables apart from Beansprouts could you use? What else could you do with the pork? Chop it up for a chow mein or stir fry?

Now THAT my friend is Chinese pork! I can't wait to make this dish too. I have never had this with the base being bean sprouts but it looks so tasty. I do have a question though. If I wanted to just make a plate of nothing but the BBQ, like you buy in the takeout, how would I prepare that? Would I just toss my pork into a wok, heat it through, and top it with some of the BBQ sauce, then thicken it with the slurry?

where can you buy msg in uk? my small town doesn't have any chinese shops apart from takeaways that all get their goods from nottingham. I've checked a big chinese chain Asiana but I couldn't find msg. I did find the soy sauce and the rice though so that's a plus.

hahah our restaurants are in porlock and polock weir, we haven't done Chinese takeaways now for over 4 years, we switched to Malaysian chinese street food :)

In the previous video you said to sieve the sauce before use but in this video it looks like, at most , you stuck it through a colander? Did you further process the sauce or just remove the star anise / cinnamon and pulp the garlic and onions a bit ?

It chicken you can't buy in the shop, its called 80% then its pumped with water to make it tender which is what the other 20% is, to use normal chicken breast would be really dry, how ever someone told use morrisons now does the 80% chicken.

Chin and Choo, great video again. 1. I dont get the 80% meat theory. Surely fresh Chicken boiled is 100% meat? 2. How was the sauce made, did I miss something? I dont watch anymore Chinese cooking channels, only this one now. 👍

No Chinese uses 100% chicken breast, it comes in 80%, 70% or 60% which means it's pumped with salt and water to make it go further. It's why when you cook chicken breast at home it never as soft and tender because it physically can't be. The sauce was made in the last video, I mentioned at the start and is linked below, it's the video for Chinese roast pork.
