I just served these as an appetizer and wow were they a hit! Made the pancakes bite-size, spread on a little sour cream and a tiny piece of smoked salmon- they looked so beautiful and what a perfect combination of flavors! Thank you !

They look fantastic as is! But when you laid that salmon on top, you took it right into orbit! That's just spectacular! Another new and downright elegant use for zucchini, and I love it.

I used to make these back in the 80’s. i would use two tablespoons of flour and 1/4 cup of parmesan cheese and a pinch of italian seasoning and add that to my wet mixture. after my patties were done I added a scoop of cottage cheese on the side. Great breakfast or lunch or dinner. 👍

My half Italian grandma made these and served them with lemon. They were delicious and one of the few vegetable dishes I would eat as a kid.❤

So good! I've been into chickpea flour instead of white flour because I think it's got more protein and is a bit healthier than the white. Going to make this soon. Looks amazing! I can smell it through the screen! Love your accent. I'm Italian too. Buon appetite!

Thx for the recipe. I love ...love your accent by the way ~ lol. I made the pancakes but I included carrots in it. The batter gets too thin from the liquid in the zucchini, so I had to put a lot more flour in it. They turned out super delicious. I finished it with sour cream and mosterd. To bad I didn't have a bottle of red wine to compliment it. Next time.

I made this, but with yellow summer squash because no zucchini. I put spreadable garlic and herb cheese on the pancakes because no sour cream and it was absolutely delicious! Mille grazie!

I'm seeing you first time today .it's 2020 and it's been a misery of a year with more to come. Imagine my surprise to feel all that heaviness lift off my heart as I chuckled watching & listening to this lovely gentleman. Only one thing left me a little sad. I think Italy keeps the best wines for themselves, no, seriously. You can order a house wine anywhere over there n it'll be good. Here in the ghostly remains of what used to be the United states , we have shelves full of lousy wine. hmm salmon and red wine and fresh veggies , why he looked so good 😉

I would skip the salmon and top it with grated asiago, sauce, and fresh mozzarella. Melt the mozz and BAM!!! Side of pasta and we're all set.
