I add some salt to the grated zucchini and let it sit in a strainer, in the sink for about 15 to 30 minutes and then I squeeze it to release the water.

It’s more or less how I make it, but I add: one grated potato, one grated carrot, handful grated parmesan, handful chopped parsley, garlic powder, paprika powder, cumin powder. I use buckwheat flour and grating goes with a machine… My preferred dip is (home-made) tzatziki. It taste so good. bonappetit.

I love watching you cook. You remind me of my Mema who was from Campania Italy. She used to make many of the same recipes. She passed away this January at 99th s old. I miss her so much and your videos are so comforting.

I love your vlogs. I also follow an Italian couple from Northern Italy. They have been living in a motor home and traveling. They went to Alberobello Puglia and visited the tiny houses, trulli. Puglia is very beautiful. They drove all along the coast of puglia. I will go there someday.

If you don’t check the garden sometimes the zucchini blows up like a big cucuzza. Those are the ones we use for the zucchini pancakes. Thanks Pasquale.

My non Italian mother started making these back in the late 1940s. She grated the zucchini and drained in a colander for awhile. Squeezing is much better and faster. Basically she made them similar but added a bunch chopped garlic and no chopped scallions to the ingredients. Will try your exact recipe real soon.
