It depends where you want it in the progression. There are low and middle range stones, finishers and superfinishers.

On my scale of rating the Jnats the hardness is 5. Very hard, but not too hard. There are still two levels of hardness above level 5. Fineness is 5+++. An extremely fine stone. This is the highest level of fineness a Jnat can reached. Rarely! No wonder Hatanaka filled them with stamps and put them in these nice boxes. Theres a leaflet inside the box comparing them with diamonds.

Before honing the kamisori we first regrind it and we needed the wrench to change the grinder wheel.

Great video. In razors the apex is so thin it really requires this extra level of care with the stones. For knife sharpening you don't need to go that far. I use just a ruler as a guide. If no light passes under it then the stone is flat enough to cut paper towel one handed.
