Just don't add alot of water , add just abit and you can add water later if it's hard 👍

I only put it in the fridge when I make it plenty and the fermentation is getting too much but if am gonna use it for days or week, there's no need to put it in the fridge. With the water too, just make sure there's always enough fermented water so you can use half of it and add water and make it to get perfect and nice one.

Hi dear. My consistency is just like yours but as soon as they're out of the oil and I put them on the paper towel, it looses cruchchiness and becomes chewy. What can I do?

Just enough water to cover the millet and use the spices the amount you prefer to your taste 👍
