Brass plates can be used for eating if they are tin coated. Do not use brass thali plates without tin coating. Kansa (Bronze) is more aesthetic and is beneficial for daily usage.

Wow!! They are deleting comments!!! Well I will keep posting as I am one cheated customer. I paid 1799 for the iron tawa and there was no information on the black coating whether it is edible or harmful and how to remove it. I bought it more than 1 yr back and I am still not able to use it because of the black coating which is next to impossible to remove. Everytime I wipe my hand on tawa the black residue appears on my hand. And it is 1799 rs!!!! I am more shocked that instead of informing how to remove it they simply deleted my comment. This shows their authenticity and professionalism.

Dear Asha.. There is no black coating, it is the seasoning done on iron. Iron base colour is greyish in colour. The same is heated in charcoal furnace and then we apply sesame oil with iron powder mix on the surface to season the tawa. Upon its cooling, the tawa gets darker. Do not remove the seasoning by scrubbing it. The dosa will start sticking to the tawa if you try scrubbing and removing it. The more you use it , the tawa will get darker with usage. Please note your comment is not deleted. We just took sometime to answer the same here. Any iron tawa if you keep rubbing it, will result in the seasoning coming off in your hand. @@Zishta thank you for the explanation.. but each time I swipe my hand on tawa the black powder comes off. Thats why I was concerned and I could not see earlier comment so thought it must be deleted. I only wanted to know what is it and if its edible. Thank you!

Pls inform - isn’t the very purpose of using Bronze or Brass -- Lost if Tin coated from inside ???? So are we really using bronze when the food is actually getting cooked in tin coating with the bronze only being from outside ??????? So if it’s tin coating from inside - y not tin pots n pans instead of bronze outside n tin inside ?

Extremely valid question. The challenge with using tin vessels is that tin has a very low melting point. Hence it is not very convenient to use that vessel. We do have a Eeya chombu that is used only for making rasam. Brass is an alloy of copper and Zinc and both are very alkaline metals. When we cook acidic elements in them excessive leaching will happen. Hence tin coating will prevent that excessive leaching. Same with bronze (Which is an alloy of copper and tin with zinc also present), when we cook acidic food, its safer if we use it with tin coating. Now with the tin coating, will it impact the benefits of cooking in them, for which we need to understand the 3 key benefits: 1. Nutrition protection >90% of nutrients are preserved while cooking in them and tin coating only enhances this benefit. 2. Alkaline nature helps in neutralising the acidity of the food cooked in them and tin coating still enhances this benefit 3. Micro nutrient addition - tin helps to prevent excessive leaching of copper, zinc into the food. Hope this clarifies your query

This is just an add on provided along with the idli pathiram. You can continue to use muslin cloth. Its just that they have been cut and shaped to the size of the plates.

Yes. You can cook rice without kalai. But be careful , sometimes the water used can be acidic and can cause some patina formation.

batter is very important but brass idli pathiram allows the steam to go through the batter as it has holes in the pits, there by making it fluffier.

yes we can store for upto 2-3 hours. Do not refrigerate as it can lead to tin coating wearing off faster.

They are also good. Black clay pot are double backed and may not have the alkaline property like red clay but they have a longer life.

First cook rice completely then cool it add curd to it and salt also mix well like we need to smash the cooked soft rice with curd and salt. Then do the tadka with ghee , black pepper ,jeera and mustard add to xurd rice mixture No need if milk add more curd

yes. if you are making this early in the morning and having it after a few hours, the curd can become sour. Hence the use of milk which will set into curd in time and prevent the curd rice from turning sour.
