You’re not emulsifying anything. There is nothing binding the butter and water. You’re just stopping butter from burning by adding water so that asparagus has more time to cook in butter and absorb. Stop with these lies.

My only problem with this is that beefsteak can be VERY varied, theres a LOT of different types. Also, this all can depend on what is grown closer to you, as any produce that has to travel further will be a little worse quality, often a little more bland or the texture is a little different (although beefsteak will always be a little more "mealy" per se)

The romas you buy probably have to travel far,this means they are either too mealy or too firm, both meaning no flavor in the Roma. Just like most things, the more local you source it the better it is

campari is top tier- roma is only bland out of season. beefsteak is the worst tomato it’s one of the most inbred and has the most water and least flavour. they always feel chalky too- subway tomatoes are always beefsteak. heirloom tomatoes can look like beefsteak but they have more wrinkles and more flavour.

@@annetadayon6797 Campari is a good medium sized tomato with a completely different structure than any type Heirloom. Heirlooms tend to be meaty and lower in moisture than most other tomato types, especially camparis which tend to have thin flesh (meat) and tons of water and seeds.

any oil works- it’s frying, so canola is honestly the standard. she’s just healthy and avocado oil is marketed as healthier (all unsaturated fats are bad for you in high quantities, grain derived oils are just a touch worse). the flavour would honestly be more authentic with canola.

This might sound silly because the ingredient is in the name, but what could you use instead of alcohol for the sauce? To make it taste nice and complement the lamb? it doesn’t necessarily have to taste like a port wine sauce since I guess that’s hard without wine
