Liked the chicken breakdown demonstration. That sauté finished with cream though? Even assuming you pull together the doneness of the meat and the dairy finish, I can not imagine more than a single bite. Unless followed by limitless brut!

It’s always interesting to me that “creme fraiche” literally means fresh cream but it is really cultured/aged cream. “Old cream” would be more accurate lol

When I hear how these Americans simply can't pronounce foreign people's names correctly, then I'm done watching after the first minute, for they sound so deliberately, self-inflicted ignorant, that I can't take them seriously any longer for the rest to come, whatever more brainy or witty they might had had to say.

at 13:40 is one of the most delicious dishes I've had in a while. The huge ham slices on Julia child's "The way to cook series" is exactly alike. However those huge ham slices were no longer available as she said they would be, 30 plus years after her series. Franey uses smaller ham steaks, so I decided to give it a go. Franey suggested what Julia used, which is Port Wine instead of Chablis (He had to use Chablis as he was in Chablis) so I went with the Port. I didn't strain it as he did, as I didn't see how the the Shallots and the tomato bits would affect the flavor. I don't see how it could have been better, strained or not. It was THAT good.

I can find no mention anywhere of the brother and sister in this video who started Bernadine.. Now its Eric Ripert. It's been more than twenty years since this video was first made. But the 90's don't seem that long ago to me.
