you could play a game all night long: show you the ingredients and you guess what he is going to do with it. basically you can't never guess... that's the genius of the man

I remember dining at his restaurant not far away from the fireplace/rotisserie with Paul's black lab curled up on the hearth such that the waiters had to step over the dog. Memorable night! Memorable food including his signature soup!
