🌟 Ingredients: ➡️For seasoning the shrimp - Shrimp 200g - a pitch of salt - White pepper 1/8 tsp ➡️For the sauce - Soy sauce 1 tbsp - Dark soy sauce 1/2 tsp - Sugar 1tbsp - Shaoxing wine 1/2 tbsp - Sesame oil 1 tsp ➡️ For other - Frozen mixed vegetables 100g - Day-old cold rice 300g - Chopped green onions 20g 🌟Steps: 1. Season the shrimp with salt and white pepper. 2. Beat the eggs with a pinch of salt. 3. Prepare the sauce by mixing soy sauce, dark soy sauce, sugar, Shaoxing wine, and sesame oil. Set aside. 4. Sauté the shrimp until about 80% cooked, then remove and set aside. 5. Add more oil to the pan, scramble the eggs. 6. Add frozen vegetables to the pan and toss together with scrambled eggs until heated through. 7. Add the day-old cold rice to the pan. 8. Pour in the sauce and mix well. 9. 🌟Ingredients: Ground beef 300g ( or any type of protein you prefer) Large sliced bell pepper 1 Chopped Broccoli 200g Minced garlic 5 Grated ginger 20g Black pepper 3g Shaoxing wine 1 tbsp Cooked noodles ( choose any type of noodles you prefer; I’m using vermicelli noodles) ➡️For the sauce: 1 cup water Soy sauce 2 tbsp Dark sauce 2 tsp (for color) Oyster sauce 1 tbsp Brown sugar 1 tbsp Corn starch 2 tbsp Salt 🌟Steps: 1. Prepare the Ingredients: - Chop the vegetables of your choice. - Grate the ginger. - Mince the garlic. 2. Blanch the Vegetables: - Blanch the vegetables with a bit of oil and salt for two minutes. - Adding salt to the boiling water will help keep the veggies' color. - Adding oil will make the vegetables shiny. 3. Make the Sauce: - Prepare the sauce with the listed ingredients and mix thoroughly. 4. Sauté the Ground Beef: - Sauté the ground beef until it changes color. - Add grated ginger and minced garlic, and sauté until fragrant. - Add some black pepper and Shaoxing wine to remove any unwanted flavors. 5. 🌟Ingredients: Milk 500ml Cornstarch 60g Sugar 30g Flour 50g or as needed Egg 1 Panko 50g or as needed Spraying some neutral oil 🌟Step 1: Prepare the Mixture * Combine milk, cornstarch, and sugar in a pot. * Mix them together and simmer on medium heat, stirring constantly until thickened. 2: Chill the Mixture * Pour the mixture into a container. * Let it rest in the fridge for two hours to cool and firm up. 3: Cut and Coat * Once firm, transfer the mixture to a cutting board. * Cut it into thick strips. * Coat each strip in flour, then beaten egg, and finally panko. 4: Cook * Place jn the air fryer and cook at 400 F for 15minutes, make sure to flip midway, cook until golden brown. 🌟Ingredients: Neutral oil 15ml Onion 1/2 Coconut milk 400 ml Red curry paste 3tbsp Chicken thighs 500g Fish sauce 1/2 tbsp Brown sugar 1 tbsp Red bell pepper 1 Zucchini 1 Water 100ml 🌟Steps: 1. Prepare the Ingredients: - Chop the vegetables, using any vegetables you like. I’m having bell pepper, zucchini, and onion - Chop the chicken thighs into bite sized pieces. 2. Start Cooking: - Warm up the oil in the skillet over medium high heat. - Add the chopped onion and fry for a couple of minutes until fragrant. 3. Make the Curry Base: - Add half of the coconut milk and the Thai curry paste to the skillet. - Simmer over medium heat until the Thai curry paste is completely melted into the coconut milk (about a couple of minutes). You should see the oil from the curry paste come to the surface. 4. Add fish sauce and brown sugar to season the curry. 5. Cook the Chicken: - Add the chopped chicken thighs. - Cook for about five minutes until the chicken is fully cooked. 6. Add Vegetables and Finish the Curry: - Add the remaining coconut milk and chopped vegetables. - Add some water. - Stir and simmer for another ten minutes. 7. Add Fresh Basil for extra flavor. 8. If you have a lower spice tolerance, adjust the chili oil and chili peppers to your preference. 🌟Ingredients: Chicken legs 800g Chopped roasted peanuts 20g Chopped green onion 5g ➡️For Boiling Chicken: Scallions 20g Ginger 20g Szechuan peppercorns 3g Cooking wine 2 tbsp ➡️For the sauce: Minced Garlic cloves 6 Minced Ginger 20g Chopped scallion 5g Chopped Red chili pepper 3g Chili flakes 1tbsp Sesame seeds 1tbsp Szechuan peppercorns 3g Hot neutral oil 20ml Salt 1tsp sugar 1tbsp soy sauce 2tbsp Dark vinegar 1tsp Chili oil 2tbsp Szechuan pepper oil 1/2 tbsp Chicken soup as needed. 🌟Steps: 1. Cut the steak into bite-sized pieces. 2. Marinate the steak with the listed ingredients. 3. 🌟Ingredients: Beef finger meat 1000g Potato cubes 300g Tomato cubes 300g Onion 30g Rock sugar 40g Soy sauce 2tbsp Dark soy sauce 1tbsp Oyster sauce 2tbsp Bay leaves 2 🌟Steps: 1. Preparation: • Cut the beef finger meat into 1-inch cubes. • Chop the potatoes and tomatoes into cubes. Tip: Pour some hot water over the tomatoes to make it much easier to remove the tomatoes’ skin. 2. Cooking: • Add some rock sugar to a pot. Once the sugar has melted, add the beef and stir to coat it in the caramel color from the rock sugar. • Add the onion and half of the tomatoes to the pot. • Pour in enough hot water to cover the beef. • Add the listed ingredients and let it simmer over low heat for one and a half hours. • Add the potato cubes and let the stew simmer for another 15 minutes. • Finally, add the remaining tomatoes and cook for another three minutes.

🌟Ingredients: ➡️For marinating pork belly: Pork belly 400g Shaoxing wine 1 tbsp Soy sauce 2 tbsp Oyster sauce 1tbsp Preferred spices ➡️My preferred spices: Cumin seeds Cumin powder Chili flakes Sasame seeds ➡️others: Lettuce as needed Cooking oil 5ml 🌟Steps: 1. Slice the pork belly into one-centimeter-thick pieces." 2. Marinate and season pork belly with Shaoxing wine, soy sauce, oyster sauce and your preferred spices. I’m using a combination of cumin seeds, cumin powder, chili powder and sesame seeds. 3. Place the marinated pork belly in the air fryer with onion base. Spray with a little bit of cooking oil. 4. Cook at 375°F (180°C) for 15 minutes. 5. Serve with fresh lettuce to perfectly balance the rich fat with crisp freshness.

🌟Ingredients: For marinating chicken: Chicken thighs 200g Shaoxing wine 1tbsp Egg white 1 Corn starch 1/2tbsp White pepper 1/4tsp For others: Dumpling wrappers 20 Sweet bean sauce 1.5 tbsp Sliced Cucumber 50g Sliced carrots 50g 🌟Steps: 1. I’m using store bought dumpling wrappers. Slightly roll the dumpling wrappers to make them larger and thinner, increasing their crispness. 2. Spray some cooking oil on a baking pan and place the dumpling wrappers on the pan. 3. Bake the dumpling wrappers in a preheated oven at 400°F for 5-6 minutes, then flip them over and bake for another 2-3 minutes until golden brown. 4. Slice cucumbers and carrots into thin strips. 5. Slice chicken thighs into thin strips. 6. Marinate the chicken with Shaoxing wine, egg white, cornstarch, and white pepper. The egg white and cornstarch will make the chicken super tender. 7. Add the marinated chicken to a hot oiled pan and stir-fry until it changes color. 8. Add 1.5 tablespoons of sweet bean sauce to the chicken and mix well. 9. After washing, pat dry the salmon. Make sure the salmon is completely dry to avoid oil splashes. 2. Season the salmon with salt and pepper on both sides. 3. For the sauce, combine water with regular soy sauce, dark soy sauce, oyster sauce, honey, and cornstarch. Mix thoroughly. 4. Pan fry the salmon for 3-4 minutes on each side, then remove and set aside. 5. Sauté minced garlic and chili flakes until fragrant. 6. Blanch the ribs to remove any blood and impurities, then drain them. 3️⃣ Heat oil in a pot and add rock sugar to create caramel flavor and color.
