...now try the same recipe using Caputo Aria flour instead of all purpose @ around 75% hydration ...the structure, lightness and 'crunchyness' will blow your mind! 🙂

Thanks for the suggestion. I’ve never tried Aria. I used AP because that’s what most people have on hand and I wanted the recipe to be accessible to as many as possible.

I have a tiny question, i don't have a thermometer, and i don't have availability to get one right now but i would love to make it, how do i warm up the water enough? Like how do i know when it is the right temperature? Cause i have tried multiple times and so far the yeast had not activated at all, like no reaction after being mixed..

I grew up in an Italian household and my mother who was NOT Italian was the second-best Italian cook min the family. Second only to her Mother in Law Angelina. I never had eggplant parmesan with breadcrumbs until i was an adult. My mother's eggplant was irresistible. The best! Yours looks great! Thanks for the recipe.
