I don’t use truffle, this is a truffle paste based on mushrooms. It can add a slightly tangy flavor, but it's not essential at all. I added it simply because I had it on hand. Make the sauce without it, and it will still be very delicious-you won't regret it. Thank you for watching me!

Going to try this with fresh milled Hard white wheat, mozzarella and feta cheese's. In the USA, I'll have to search the specialty shops for Sulguni cheese here later on. Yours looks awesome, Wish me luck 🙂 Thanks for posting the recipe

One of the cheeses should be stretchy like mozzarella, while the other must be salty; you can add salt if the cheese isn't salty. I'm really curious how it turns out for you, please let me know! Good luck!
