I think you're mistaken to think that Hersha Patel is just following a recipe someone gave her. The BBC seems to have a lot of cooks who all have their own recipes created by themselves. Hersha Patel seems to be of Indian descent and perhaps that's how they cook rice in parts of India. Perhaps she got this cooking method from her parents.

@@qpht7409 I've now taken your advice and watched the video where Uncle Roger visits Hersha Patel. You're right. She does cook rice in a more sophisticated way. I wonder if it was her own idea or the idea of someone else at the BBC to create this video of cooking rice in the easiest way. The intention is clearly to help those of us Brits who are afraid of cooking rice. As we never cooked rice at home when I was growing up here in the UK, it's meant trying something new. It seems to have been the same for Kay of "Kay's Cooking" channel. Scary, how easy it is to get it wrong on first attempts! A few years ago I went to basic cookery classes and the teacher recommended the "boil-in-the-bag" long-grain rice that is sold in almost every food shop in the UK. The rice, usually in a quantity for two servings, is in a perforated plastic bag and you put the bag of rice into a pan of water and cook. Then you open the bag and drain the rice. I knew from my cookbooks that there are methods considered better. The upshot was I just gave up.

I've just subscribed because you guys are entertaining *thumbs up* Anyway, I'm a Malay Malaysian and we Malays cook fried rice similar to Uncle Roger. We measure with finger, wash rice before cooking, love MSG, and should always use wooden spoon or spatula with non-stick woks/pans. But personally, the best is to use leftover rice and leftover chicken or beef dishes (shred the meat and add into fried rice). Yummy!! LOL It's really interesting to see the similarities between Asian countries' methods of cooking. Looking forward to see more of yr video reactions :D

I remember that my mom did rice like in that video. I'm using rice cooker. Not sure was it washed because they wanted rice as non sticking form or was it that type of rice. When looking rice package here it will tell that boil fist then rinse. Some packages also have instructions how to cook with right amount of water but they don't say anything that you need wash it first in that situation. Usually those packages are 1kg carton boxes.

I want to tell you I made Egg Fried Rice myself and it was delicious. You know what I did? I prepared the Rice normally. Washing it (prior to cooking) and then cooked it in a normal pot, I don't have Rice cooker. The thing is, I let the fresh made Rice to rest for 5 hours before I fried it. So by the time I came to fry it was dry and good. I understand that if you let the fresh Rice to rest it's okay. So I used green Chili, red Bell Pepper, Ginger, Garlic, Onion, Spring Onion in the end. Seasoned with Salt, Black Pepper, Paprika (I couldn't help it. I love Paprika, I am of Romanian origin Jew), and Soy sauce in the end. Believe me it turned out to be amazing flavors. Any advice about what to add more? Or is it good enough the way I did it? This time it was without meat and I love meat a lot.

So in her defense, on the rice packages here in the US, it will say to not rinse the rice, as it acts like you will lose nutrients. That said, her draining the rice undoes that! But about her draining the rice, I did see this kind of direction in one America’s Test Kitchen recipe. Terrible idea. The rice lost its characteristic texture, flavor and shape.

Wanna know another way to upset an Asian? Use metal spoon on non-stick pan. I live in a Filipino household in the United States (born and raised Filipino-American) and when I was thirteen years old who didn't know any better, I made the fatal mistake of using metal spoon on non-stick. A bit of background. Western society has grown towards convenience food. This is why you can fit two Japanese adults in a single American kid. Many people don't really know how to cook any more and buy prepared foods that only require microwaving or take-away and this is especially true for urban areas like London where everyone is too busy to even think about food until the moment comes that their stomach starts protesting. BBC (the TV station, not the male organ - thank you for that image Nigel) was probably the first to start TV shows teaching people that cooking your own meal can be fun, doesn't require a full day in the kitchen or as Hersha put it nothing to be afraid of. Of course the objective here is not to show how good the hosts are, but that you can do it too and place something on the table that is better tasting, healthier and as a bonus a lot cheaper. Note the emphasis Hersha put on the take-away fried rice costing 8 pounds, that is the reverse psychology they put in these shows to make people want to start cooking their own meals. Last, it must be noted that northern Europe is potato country. Rice does not belong to our daily meal, it's mostly part of variation exotic foods, just like pasta, and as a result we don't usually have left-over rice. I keeps pretty well in the freezer though and if you plan ahead you can also cook the rice in the morning before going to work and use it when you get back.

I haven't tried Hersha Patel's recipe yet but I'm keen to. I wonder what her fried rice would have been like if the rice were already a day old before being stir-fried. Good enough, I'm sure. Forgive me, but people are being carried away by a sort of snobbery, in saying rice must be washed first, the water must be measured using a finger not a cup, rice mustn't be drained and rinsed after cooking; surely none of that matters much. What matters is that people aren't afraid to try to cook rice and that they manage to make something edible. I personally never ever cook rice because to me there has been a scary mystique around it. Hersha has removed that. Thank you, Hersha, and thank you, Uncle Roger, for drawing my attention to her video (as well as making me laugh). Thank you, Hersha, for telling me not to be afraid. Thanks for recommending using the maximum water which means I know the pan won't go dry, a fear of mine. And knowing that it's all right to drain rice after cooking changes everything.
