Good morning Heather. I like to cook the diced tomatoes and a jalapeño or two in a little bit of oil. I cook almost all the way. I put enough water to cover the fruit. I add salt and let it boil a few minutes put some melting cheese and let it melt and serve it over some fried eggs. I like to eat it with a tortilla. My favorite breakfast. I call it " CHILI CON QUESO", I didn't put the amounts or measurements because you might want to make more or less than I do. Lol. Just a peak into my world

I had no idea recipes needed to be approved for canning 👀. My grandma always said you can anything you would eat for dinner 😂.

To a certain degree she's not wrong, but also there are some things they say should not be home canned like anything with dairy or thickeners like flour.

Oh wow I was not aware. I was planning on making and canning a bunch of soups for this coming winter. I guess I won’t do any dairy based soups.

You can can them with approved ingredients and add the dairy when you go to cook it/heat it up :) The National Center for Home food Preservation online has a lot of great info and resources!

I have a few tomatoes, jalapeños, onions, and garlic from my garden. I should have enough for one or two jars for the refrigerator. I was considering making tomato sauce in small batches and freezing that until I have a canner load. Then heat it again before canning.

Your tomatoes look gorgeous!! I'm so happy you're being blessed with so MANY!!! Your salsa & tomato sauce look good! It's such a joy to produce your own groceries. I started Elpis on Penicillin today. All the girls were our grazing this morning but I noticed she was not in the field with them so I went to the barn and found her standing in a corner looking sad. I put her on the stand to look at her head and it is wet looking. Her shoulder was dry and cracked but this looks different. I am wondering if the shoulder started out as one thing but then she got an infection. I sprayed it with wound safe iodine to help dry it up and gave her more fly spray and some Penicillin. I have chlorhexidine I may spray on it as well. She is eating well and nursing and until today she was grazing with the herd. I'm very close to taking her to the vet I just want to try this one last thing! (The antibiotics)

@@SageandStoneHomestead I'll increase the prayers for her!! As much as I dislike financing a new pickup for the vet, 🙄 I'm really getting worried about her!!!!! She has to be feeling pretty tough to not be out with the rest of the goats! It would be awful to lose her!!! 😭 PRAYERS!!

@@merryanneadair4451 I locked her up and gave her hay and water and a couple hours later she was begging to come out. When I scratch her back or neck she seems to really love the relief... I can't see lice or mites on her but I do wonder if she maybe has mites?? In any case the antibiotics and iodine already seem like they are making the head wound less angry. I'll keep you posted!

@@SageandStoneHomestead please do! I'll keep praying!! 😉 You know I'm not certain it could be mites. Wouldn't you see evidence of them on the other goats? Mites are most generally very invasive! They like to 'sample' everybody!!

That's what I thought too but I haven't encountered mites before! I wonder if I should bathe her. I don't want to make her worse is all!

No I don't. I think it depends on a few factors! These plants put on WAY more fruit than I expected!! This video shows mostly Heatmaster Hybrid Tomatoes, will grow again!

How much does this salsa make ? And how long is it shelf stable. I want to make so today... It looks amazing !

It depends on how big your sheet pans are and the water content of your fruit but I recall getting almost 5 pints when I make it, I think! It's been a whole year and I forget!

hi i know im commenting on an old video but im wondering, you talk about adding citric acid or lemon juice to the tomato products you are making, to make it a safe acidity level for water bath canning or steam canning but couldn't you just pressure can instead and not add the citric acid/lemon juice (im really new to canning so i could be totally wrong im just corius)

We add citric acid and Steam can our tomato products. I've pressure canned them and tomatoes are sortof a mess under pressure!

I think they even suggest to add citric acid or lemon juice when pressure canned but I imagine that's just an extra safety precaution and probably not necessary!
