Kobe beef (神戸ビーフ Kōbe bīfu) (KO-BEH) refers to beef from the Tajima strain of Wagyu cattle, raised in Japan's Hyogo Prefecture according to rules as set out by the Kobe Beef Marketing and Distribution Promotion Association. The meat is a delicacy renowned for its flavor, tenderness, and fatty, well-marbled texture. Kobe beef can be prepared as steak, sukiyaki, shabu shabu, sashimi, and teppanyaki. Kobe beef is generally considered one of the three top brands (known as Sandai Wagyuu, "the three big beefs"), along with Matsusaka beef and Ōmi beef or Yonezawa beef.
Kobe beef is also called Kobe niku (神戸肉, "Kobe meat"), Kobe-gyu (神戸牛) or Kobe-ushi (神戸牛, "Kobe cattle") in Japanese.
Wagyu (和牛 Wagyū, "Japanese cow") is any of four Japanese breeds of beef cattle, the most desired of which is genetically predisposed to intense marbling and to producing a high percentage of oleaginous unsaturated fat. The meat from such wagyu cattle is known for its quality, and commands a high price. In several areas of Japan, wagyu beef is shipped carrying area names. Some examples are Matsusaka beef, Kobe beef, Yonezawa beef, Mishima beef, Omi beef and Sanda beef.
There are four breeds of wagyu: Japanese Black (黒毛和種 Kuroge Washu), Japanese Brown (赤毛和種 Akage Washu or Akaushi), Japanese Polled (無角和種 Mukaku Washu), and Japanese Shorthorn (日本短角和種 Nihon Tankaku Washu). Wagyu cattle's genetic predisposition yields a beef that contains a higher percentage of omega-3 and omega-6 fatty acids than typical beef. The increased marbling also increases the ratio of monounsaturated fats to saturated fats.
Japanese Black makes up 90% of all fattened cattle in Japan. Strains of Japanese Black include Tottori, Tajima, Shimane and Okayama. Japanese Brown, also known as Japanese Red, is the other main breed; strains include Kochi and Kumamoto. Japanese Shorthorn makes up less than one percent of all cattle in Japan.

Cutting the meat while it is in the ceramic plate is a terrible thing to do for your knife, as it dulls the tip, if you watch closely you can see throughout the video the tip of the knife is very dull, while the rest is sharp.

It was sharp but the girl is rather inexperienced with the use of the knife so a lot of uneccesary 2nd cuts had to be done because of that.

It is meant to be eaten in different courses as it is served. When they cook a meal for someone they aren't just feeding them, they are telling a story. It really is artistic.

As much as I enjoy seeing the cooking portion of the video. It kinda sorta bothers me that they don’t eat along the way waiting for everything to be done before they begin eating and knowing that all that food must be cool or cold, eating food straight off the grill is so much better than having it sit for lord knows how long. It would also be a nice edition to actually see the person eating the food vs it simply disappearing.

I agree tha tI wish they enjoyed the food hot, and I could be down with watching it be eaten, but the complete lack of a personality/ego/speaking lines from the diner's perspective is what I really highly value about these videos. It's really immersive that way.

You have to eat the food as soon as they are served while hot. They cook in front of you for that. It’s actually the essence of Japanese cooking. Sushi, tempura, sukiyaki, yakiniku and the teppanyaki. These are cooked in front of you so we can eat hot food hot, cold food cold, as we say. Too bad nobody told you.

draghith you are probably confusing traditional teppanyaki with Americanized teppanyaki. Traditional teppanyaki just means that they cook the food in front of you. Americanized teppanyaki is more “show” oriented and done for entertainment (includes stuff like flipping the cooking tools around). It’s a common misconception don’t worry.

I don't like people who always complain and show no respect for others doing their best. If kobe beef is not your cup of tea it's absolutely fine. It is just your opinion. Those who have never tried kobe beef in Japan but they say kobe beef is over rated....just pathetic..

I know she looks like Amateur. I will not complain if it tastes good but it is just my opinion. Yeah I understand your opinion. If you pay much money for your trip to enjoy this beef in Japan. You will expect professional chef for such a expensive meal then amateur cooks your meal. You may be disappointed.... But... she is doing her best you know I can't complain XD I have been to Kobe and tried that beef. It was wonderful experience. I was lucky old man with perfect skill cooked my meal :)

Sam LSD I hope you realise you cannot die from social "disease." Fat on a steak is what gives it flavor and tender. The Japanese aren't starving, they probably make more money then you. The only thing I agree is paying $200 for that meal, because it was prepared by an amateur chef.

SuperFromatoz Substandard has the word "Standard" in it meaning it is absolutely not subjective.. stop being a pandering moron by making excuses for her, many different trained chefs have told you her skills are terrible, those are facts if you don't like it no one cares. The fact you go straight to the idea that she has to show her vagina because people criticised her lack of skill really demonstrates your commitments. Go to a school pay to learn something and try defending your lack of skill with that bs and see how long the chef puts up with it. If a man had received the same criticism your ass woulndt even considered making that long rant in an attempt to justify his skills or lack there of and you have the nerve to call me a dumb ass... lol it would be hilarious if it weren't so monumentally sad that this kind of pandering is on an epidemic level with in western culture.

I am 100% Japanese and I have been to many places serve KOBE BEEF on TEPPANYAKI but as you see, the quality is absolutely sucks. Honestly, if this really is worth $200, THIS IS HORRIBLE, DISASTER and how's possible it costs you $200? Think about it, they could serve fresh seafoods and more spectacular vegetable not just the green peppers and boiled shrimps?(That's what you usually get with AMERICAN TEPPANYAKI) And Also did research and it says this restaurant only hires woman. I don't get it lol I hope you guys don't get wrong TEPPANYAKI. Thank you.
