Chef Tomoo Kimura, 42, opened Sushi Kimura in Singapore almost three years ago and it has since gone on to receive a coveted Michelin star in 2018. We follow Chef Kimura around for a day to show you what goes into a Michelin star sushi chef's daily routine.

Everything Michelin chef “doubts” themselves, it’s what drives them to always be learning, adapting and improving. You can never settle as a Michelin chef, you always have to be worried about your food not being good enough.

its more like Kimura is a humble type of person. Japan has the most Michelin Stars restaurants in the World. So it is generally accepted that only the best in Japan get them. Hence why he was wondering why, considering he's technically very new in the industry. Goes to show he has insane potential. 30 years from now, i can definitely see him being considered the best Japanese Sushi Restaurant owner.

All I know is if I went probably be there along time. So much I want to see. They have an island that is for the most beautiful flowers you'll ever see. Also 47 Ronin Memorial. Seriously way to much culture that I've been dieing to see. Also their Koi oh my god Koi farms wow.

@gottfer are you serious? You have no clue how attentive he is and how gentle he is with his movements. Did you watch the video? He spent years training before even allowed to touch the fish, then another year training before even being allowed to serve. He was taught right and it shows with everything he does. You don't deserve to eat sushi prepared the right way. No respect for food...

the artist Well just stick with it. Eventually you’ll be on the line too, working your ass off. When I was training I had to make the sushi rice and the miso soup for like two years before I was allowed to go near the fish. Luckily I had a great teacher and learned all the “basics” the right way. Now I have been on the line for like 5yrs. Hopefully one day soon I will have my own restaurant. One day.................

the amount of mastery, attention to details, quality of fish shipped from hokkaido as well as the premium water used, and just everything about this video made me really respect and honor michelin star restaurants owner in general, however in this context, sushi. There are so many key points in this video that prove he's a masterclass talent of rare ability. His finesse, attention to detail, and raw dedication alone are something out of this world. It was also refreshing to see that he is the one who unlocks the restaurants in the morning and locks it at night. He's a true leader and an inspiration. This man has never taken a shortcut in his life. His sushi is art.

i haven’t been to Singapore and eaten your sushi but when i watch this video,i enjoy your sushi very much.I love your restaurant too.It’s feel like home.I see your love with this food and i extremely respect it.Best wishes for you and your family.I hope someday i can come and enjoy your sushi.Thank you.

The only sushi chefs in america arent even japanese. You get spanish, chinese or korean. Havent seen white people or blacks but im guessin they out there

Talented yet humble and he appears to have a beautiful relationship with everyone he knows. His staff, his patrons and even his seafood vendors. I love how relaxed of a bond he has with people, from the fisherman texting him a pic of his cat amongst the catches of the day to the delivery man smiling/joking with, "So long, never see you." Lol! Just like he said, things have REALLY lined up perfectly for him in life. It's well deserved and I wish him continued success well beyond his 60's. 👏

This is so inspiring. Especially being an aspiring chef and cook. The attitude and the passion makes all the difference the way food is made. When something is truly made with love and passion: then you can taste it.

Wow this was a master class in sushi and passion for serving his customers the finest. He literally broke down and gave away so much fish type and quality knowledge in a few minutes . Bravo 👍🏼❤️

Japanese/sushi restaurants are such an experience. So calming and so much art, love and dedication goes into every slice of fish. Makes the experience of eating there that much more special. I admire these chefs!!

I've never seen such a chef to put more passion and dedication in his work then this guy!! From the moment he arrives he's preparing his layout for the day!! Going over his orders to making sure everything runs smoothly!! I have always been impressed w/ guys that knows how to cook!! And this DUDE definitely knows his stuff!! I would ❤ for him to cook for me ANYTIME!! :)🌷🍀🌷

Deliveries - he’s like a little kid unwrapping presents, so excited and enthusiastic after almost 20 years! Seems like every Michelin Star chef behaves the same way - they love the produce and their vendors, and they always want to get better. Passion!

It's unbelievable the amount of hard work, art and craft that goes in to becoming a sushi chef. Don't they get enough acknowledgement for their hard work, although content creators such as you guys are slowly letting the public know that these guys are incredible! 🙌🙌🙌

You got stitches? I left the doctor with 4 holes in my gums and a syringe to flush the holes out after each meal. I guess I shouldn't be surprised, I got mine out while I was in the military so it was done on a military base...but hey, they gave me some kick ass meds to have fun with though!

Amazing knowledge of the whole chain that brings what you have in your plate. Reminds me some chefs in France who are knows their suppliers as if they were from the same family . Total harmony and balance over the whole process with quality as the first aim.
