They clean between each item and don't allow food to burn. They probably use a high-quality cleaning method at night. The Japanese are meticulous about cleaning. Also, sauces were heated up in their own pot and applied to the food off the grill. Whereas we North Americans would do it on the grill. The Japanese cooking techniques are way different than ours in a Restaurant setting. There is not rush, panic just a concentration on preparing the food to the best.

Tofu can be good if you let it be tofu. It does have unique proteus and flavors. So many times people try to force it as a meat replacement or extender, and that's just not what it's meant for. I would say Mapo/mabo tofu (many pronunciations because it's so popular) would be another good thing to try, if you enjoy spicy.

For me, if you go to a sushi place or Japanese place, you can get a sense of how good it will be by the quality of the miso soup. @@Wallahmisk The presentation and condiments generally doesn't play as big of a part of the price, especially at teppanyaki places that require high heat grills like you see in the video. They even mention it by name. Soy sauce, soy sauce with citrus, black pepper, salt, garlic. The spices that cost a lot of money (saffron and vanilla tend to be the big two) are rarely used in the kitchen due to their scarcity. If you want good quality steak, scallops, or shrimp, it is quite expensive. Standard restaurant markup is 200%-300%. For reference, a proper filet mignon will go for about $20/lb and you usually get served 1/2 a lb or so per serving. Kobe beef on the other hand is closer to $300/lb for Japanese Kobe. American Wagyu/Kobe and Australian Wagyu/Kobe is a lot cheaper. In the video, its roughly $110 for 150g of Kobe during lunch it seems. 450g is about 1 lb, costing just $330 for 1 lb of their Kobe. The mark up there is actually quite small.
