I think I would make this differently. I would saute the onions and peppers and maybe add mushrooms just because I love them, in the saute Pan but I would put the potatoes on a sheet Pan with parchment and broil them tell they were nice and toasted and then add them to the pan so you'd get more of those nice crispy bits.

Thank you both so much for sharing your delicious recipes, I could watch you all day! You’re so natural and I love the fact that the recipes are straightforward and don’t take too long to prepare and cook. You mentioned that you’re always on the lookout for non stick pans so I thought I’d mention a brand that I discovered a couple of years ago, it’s called SKK. Their equipment is quite expensive but absolutely fantastic, we have a wok that we use for all frying recipes and we have a small grill pan. The range is Diamond 3000 plus, both pans have detachable interchangeable handles and the small pan can be put into the oven to keep warm. We live in Scotland, UK but I’d imagine the products are available worldwide.

Doing the potatoes in an air fryer takes care of the browning without any of the sticking problems of pan frying. Then just mix them through the sauteed onions and capsicums. That's how I do this kind of dish. 💚✌

I did that just this morning, but did use a raw potato and one onion, sautéed in my instant pot (Teflon maybe???) for like 3 minutes and stir, lid back on, 3 minutes and stir, then added pack of mushrooms, lid on for about 3 minutes and stir and viola, I did thinly slice my potatoes after quartering the potato.

You may need to season your pan. This is from shedheads.net for red copper pans: Step one: wash your pan with soap and water, and let dry fully. The manufacturer doesn’t include this step in the seasoning process but we like to give anything brand new a quick wash just to get anything unsavoury off that may have seasoningbeen left on from manufacturing and packaging. Step two: Once fully dry, spread a light coat of vegetable oil (you can also use coconut, avocado or flax oil here) on the entire inner surface of the pan using paper towel or a kitchen rag. Step three: Place the oiled pan in a preheated 300F degree oven for 20 minutes Step four: Remove the pan (use oven mitts!) and let it cool down on its own completely. Step five: Wipe away any leftover oil and you’re good to go!
