There are pecan pie lovers. There are pumpkin pie lovers. There are also apple pie lovers. My Thanksgiving dessert of choice is this Caramelized Maple Tart and yes, it’s not a pie. It’s a tart with a custard that’s JUST sweet enough and almost fudgy in texture. It’s maple-y, it’s nut free, and you’re going to love it. Made this for Thanksgiving and my dad, sister, and I loved it! I even made a mistake by forgetting the corn starch for the filling; I baked it about five minutes longer than the recipe called for to compensate and it set up A-OK! Wasn’t runny or loose at all. I’m making it again tonight (12/23) for family Christmas Eve tomorrow, this time with NO mistakes 😁 I’ll let you know how it turns out! Thank you for posting and Happy Holidays!!!

Made this today. Really liked the tart crust, the filling texture was nice. We used Grade A golden maple syrup which was maybe our mistake- too subtle of a flavor. I'd reccomend Amber at least.

When I read the recipe for this, I thought "surely a tart case made with melted butter will slump in the oven if it's not chilled first and then blind-baked". And it did! Twice! The third time I made the case, I chilled it for 30 mins and then blind-baked it (should have listened to my instincts the first time...) - really keen to know if there's some magic trick I'm missing for doing it the Alison Roman way? Anyway, the final thing was pretty good, but I'm glad I wasn't making it under immense time-pressure, I would have had a breakdown.

Same :( and It seems like way too much butter v dry ingredients once it’s mixed. I’m surprised that they’re measured by weight originally and not adapted. I’ll try again with chilling! Edit: Freezing the tart dough first worked best in my re-attempts and the pie was a hit!

My case slumped too! I was thinking the same thing. Wish I read this comment first. I ended up having to push up the tart case walls up after the bake before I poured the maple mixture in. The walls were half an inch lower 😢😢

Oh man I’ll have to try this again! My maple syrup seized and became one hard blob. Oh well just took out the blob and baked the cream mixture sans blob. Still good.

Maple sirup ? For canadian people it is surely a classic. I just figure out that maple is in french 'sirop d'érable" which they used to put on pancakes. Here in France, real maple syrup it is really expensive as real vanilla extract😢

Will it darken as you let it sit? The one out of the oven was a yellow shade but the chilled prev day one is a golden brown.

Is there an error in the printed recipe? It seemed like way too much melted butter. I ended up adding more flour until it resembled the dough in the video. In any case, it came out great and everyone enjoyed it.

My kitchen smells like French toast/breakfast! Just made the tart, but unsure about results. Not sure I “caramelized” the syrup enough-I did have the big slow bubbles, but there was no chance of seizing any caramel. Top of tart was all air bubbles when cooked-not “shiny” smooth. It also leakage from the pan. It feels okay to the touch, so we shall see. My main concern is that I didn’t reduce the syrup enough with no temperature to guide me.

I'm willing to bet the maple custard with a pecan crust would work perfectly! Maple and nuts go really well together. I plan on making this for Thanksgiving with a nut-based crust.

Just know that multiplying this recipe by 1.5 to accommodate a larger tart pan is easier said than done. Multiply the butter in solid weight, not melted 😭😭😭 or else your tart crust will be the consistency of cake batter.

What size tart pan were you using? I only have an 11.5”. I couldn’t tell or didn’t hear Alison mention what size she used. Need to know if I need to increase the amounts for the recipe. Thanks for the tip here on butter.
