Name a better duo than a super moist cake with a delicious caramel almond top? WE'LL WAIT!! Just kidding, you don't need to wait - the cake of dreams is here!! Dane's back with a Swedish treat - the Tosca Cake!
7" Loose Bottom Tin.
SPONGE
135g Melted Butter
90g Golden Caster Sugar
2 Eggs
50m Double Cream
2 tsp Vanilla
¼ tsp Almond Extract
90g Self Raising Flour
40g Ground Almonds
¼ tsp Baking Powder
Pinch of Salt
ALMOND TOPPING
90g Butter
70g Golden Caster Sugar
Pinch of Salt
15g Plain Flour
1.5 tbsp Milk
90g Almond Flakes

You guys inspired me to make this … I already had a Tosca recipe that works for me at my altitude … but I followed your caramelized peaches🍑 Delish! Also paired it with crème fraîche that I made with heavy cream and yoghurt; buttermilk isn’t a thing here in Mexico. I hashtagged you guys! Gracias!

Looks amazing but please do not wear nail varnish when baking. I was always told to not wear jewellery or nail varnish when at school, I know it was a long time ago but I think it was good advive❤

How would I scale this up for a 9" round pan?

It involves maths. Technically you'd multiply all ingredients by 1.65 but if that's a bit faffy you would get a decent result in a 9" pan by increasing all ingredients by half again (i.e. 1.5x), it would likely just be not quite as tall as Dane's version.
