What I love most about watching you work is that the things you make are _meant_ to be eaten, unlike many similarly elaborate chocolate/candy sculptures. They aren't just bitter sculpting chocolate and ten kilos of fondant; they're made to be as enjoyable to eat as they are to look at.

I just loved the clear glee there was in dropping that big heap of whipped cream into the bowl underneath from on high. There's no good reason to have done that, other than for the sheer joy of watching it plop down into the mix, since most people would be super-delicate with such a thing in order to not cause the cream to deflate. Also, _casting the actual seeds in silicone to make a mold to make the seeds._ That's brilliant, unnecessarily over-the-top, and perfect.
