But this one is sooo good! 🍍🍍🍍
It is composed with a pineapple, basil & rhum soaked baba sponge, a fresh pineapple and vanilla compote, a soft pineapple cremeux and a light pineapple mousse.

I love that in his world, literally anything can be made out of an egg shape. Pineapple? egg. motorcycle? big egg. Lion? a series of eggs.

He's the first happy executive pastry chef I've seen. I'm a previous pastry cook at a casino bakery, so many chefs come and go, they all seemed miserable

While this is interesting and entertaining to watch, it doesn't place you in this man's life or give you any insight into his personal life. You wouldn't know if his mom died the week he made that video. You wouldn't know if his girlfriend (or other) left him the morning that he smiled and baked for a camera. No wonder the world is the way it is. Most of you have no idea the world even exists.

I think the center is a baba au rhum… reminds me of making babas years ago. I served them with caramelized pineapple and banana, just so I could call them “babas banane ananas” which in French sounds like “bababananana”.
