You guys really seem to enjoy it when we keep things simple and basic. In an effort to make more space in our basement freezer, we're going to make up some vegetable broth today. Using onion scraps, carrots, and peapod shells. This is a super simple recipe and the canning process is about as easy as things get. Don't be afraid of your pressure canner - you can do this too! ♥

That’s what I would do! Freeze dry it and powder it! I did that with all my tomato skins and other veggie scraps and added them back to my next batch of pasta sauce as a thickener. It worked perfectly! It was much more effective than tomato paste.

I am *self preserving *. That's a good word to describe me. I'm not a homesteader, but I'm reverting back to the way my Mom did in the 50's when I was growing up. She did all this stuff.

Yesterday I canned 7 quarts of pinto beans and today I canned 7 quarts of chicken soup. So excited to to come up with new ideas. Thank you Rachel for all you help. Inspiring all of us ♥️

I just canned up 7 quarts of chicken broth today. I got my veggie scraps and chicken bones going on Friday night and let them cook until Sunday morning. Your broth looks so good! I would say next project will be putting them into the freeze dryer...and maybe turning them into a powder?

Must be a good weekend to can. I also canned pinto, black, navy, garbanzo and red beans and made one last batch of turkey broth this weekend and canned it. Felt so good to get that stock back in my pantry! 😊

I got a roaster exactly like that one at my local Goodwill. I was so excited! It was $5! I always had to borrow the roaster from the church kitchen for tomatoes and applesauce.

Just a tiny idea u may like....for this type of job I use my 2 cup glass measuring cup and with one dip u can see u have 2 cups ...pour it in and it makes it an easy, quick, less mess job of filling jars 😊🤞 Hope that helps 🤗

Oh my goodness! I did the same thing with my chicken broth last week...spilled a bunch all over the counter, down the cabinets, on the floor. What a hot mess! It's encouraging to know that I'm not the only one this happens to. LOL🤣.

Okay, I’m super excited to try this. I watched this video about a month ago and began saving scraps with the plan to make it. I pulled all of my veggies out today, have the toaster ready and watching it again to create it. Thank you Rachel!

Oh dear. She did a Rachel lol I agree-as Todd is the ‘freeze dryer man’ and Rachel is going away I think he will make vegie powder in the freeze dryer. Looking forward to see the results. The vegie broth looked amazing

I always work with a towel under my jars just because of something this! It is a much easier way to clean up. Just remove the towel and the counter is clean. Things rarely get as far as the floor. When working with hot liquids, it protects you from hot splashes. Stay safe. Shalom.

You are just brilliant Racheal. I have a small garden but often have more food than we can use before it goes off. I am now going to try and buy some canning jars, lids and rings. I live in Liverpool England - Please keep going, life is a constant struggle these days so, anything that helps the family to be self-sufficient is essential - very best wishes.

I would bet the plan is to dehydrate or freeze dry the scraps to make veggie powder. My chickens would love those pea pods!

That is a really great looking broth! This is a great reminder that we need to start making some freezer space and broth is a great way to do that. We never thought about using scraps for broth! Anything that doesn't get preserved goes straight to the chickens or goats but this really gives us something to think about. Thanks so much!

Hi! I keep the stems from cilantro in the freezer so when I make soup I can blend them up with tomatoes and add towards the end of cooking for an extra punch of flavor. I imagine the same would work with parsley. I keep other veggie scraps in the freezer to make chicken broth with the carcasses of rotisserie chickens. I'm not fortunate to have goats and chickens yet, but I'm working on it.

Saving all my veggie scraps to make broth. Since I live alone, I've asked my great neighbors to save their scraps for me. They think I'm nuts but will be redeemed when they get some veggie broth to use.

I have never canned vegetable stoc. I always put all of my my vegetable scraps into my meat broths. I am definitely going to make some vegetable stock. Thank you for the recipe.

This is something I have never done - vegetable broth. I have done onion broth but not with bean pods. What a wonderful idea! Can't wait to try this. I am like you, getting started on another canning project is hard when last summer was such an awesome year for gardening/harvesting. I was processing peppers just before Thanksgiving. Usually my season is over mid October. Now here is the end of January and time for some seeds to be started. Wow what a fast winter break! Mentally getting ready for another big year! Thanks for sharing your adventure with the community!! You are so sweet!

I never made vegetable stock in my opinion the ones I've used from the store were tasteless so I'm so glad and grateful that I've watched this video I'm going to try it and I'm hoping I will love it

The scraps likely have very little nutritional value or flavor left. That is why most people compost them. Their benefit is in decomposition at this point. I'm looking forward to seeing what you do with them.

Why would you say that? Chiefs do this all the time. And they would have as much nourishment or more as the frozen section in the store.

they make a delicious broth that is very full of flavor. I've been making it for years, use it in anything you would use beef or chicken stock in. I also use it to saute' veggies instead of oil.

It's just me and I make chicken, turkey and ham broth and what scraps I get I use for them. This summer I will be able to make some vegetable broth when I get a canner. I freeze mine in 2 cups in freezer bags. Homemade is the way to go. 😋😋

I learned about saving my veggie scraps about a year ago and have been doing it ever since, it’s amazing! Can only store a small amount as a college student but it makes the most delicious veggie broth 😍

Rachel I've been making vegetable broth from scraps for years but I've always frozen it in 2 cup measures perfect for making rice. I've been wanting to start canning it instead of freezing. Thanks for the encouragement I used to use the leftover pulp in green smoothies.

I have a really old, 2nd hand roaster too. I bought it 10 years ago when we moved here and we with 2 teenagers!) ended up staying in a motel room for a month waiting for house closing & our belongings to come in from overseas. It is great! I used it for a slow cooker mostly. Mine doesn't have the flowers on the front. It works as well or better than any slow cooker I've used. Not bad for $10

I find myself making things and saving the scraps for the chickens. They are spoiled and have come to expect leftovers and kitchen scraps. Recently I took some old cornmeal and mixed it with hot milk. It made a welcome treat on a very cold morning. I may have to make some vegie stock now, the girls would love the leftover vegies. Thanks for the idea.

We always have freezer bags full of mirepoix, celery onion, carrot, we add peppers, garlic. Nothing better than a good veg broth. Such a good teaching video!

I have been canning for 8 years and have never made veggie broth. I love the idea of using scraps for this. I normally just feed them to the chickens but, there's just too much in the summer. Thanks for sharing

Totally understandable! The holidays take a lot out of you! The veggie broth looks good! I really need to spend more time in the kitchen, trying new things, but it's so hard when I've been in the habit of making the same things for so long, to go outside of my comfort zone, & try new things. But you make it look so easy!

Scraps: Freeze dry and then powder to add to soups and much more. Now you have me hankering to make some vegetable broth to use to make "instant" rice. I've made it using chicken broth. However that doesn't have a long shelf life. Suspect adding using vegetable broth will give cooked white rice a big boost of flavor and when dehydrated will give "instant" rice a much longer shelf life. Thanks for sharing and inspiring.
