Bavarian coleslaw with bacon
Ingredients:
1/2 head white cabbage
1 tbsp salt
1 tsp hot mustard
1/2 tsp whole cumin
100 grams of bacon
1 onion
3 tablespoons white wine vinegar
4 tablespoons vegetable oil (sunflower oil or canola oil)
200 ml vegetable broth
1 pinch of sugar
Salt and pepper from the mill to taste
Preparation:
Remove the outer leaves from the cabbage.
Cut the white cabbage into fine strips, place in a bowl and season with salt.
Massage the salt in well with your hands and leave to soak.
In the meantime, dice and fry the bacon.
Cut the onion into small cubes and sauté until translucent.
Deglaze with vegetable broth.
Add the mustard, sugar, cumin, vinegar and finally the oil.
Bring to the boil and pour over the cabbage.
Stir and leave covered for about 2.5 -3 hours at room temperature.
Season with pepper and salt.
