Dying to recommend her amazing story to people with Parkinson’s, MS and other horrible diseases - we all know those people, but feel powerless to say anything because it could offend them. Thank you for the detailed info about your delicious beef shank dish! Would also be wonderful to see a video about all your uses each week, of the chuck roast you mentioned? Not sure if we have something called chuck roast in Australia, but seeing it in a video would help identify it. And just seeing how you use the different components you mentioned would be awesome as well! Thankyou if you could consider doing such a video!

Recipe is explained at minute 12:00 for beef shanks. Dry brine 48 hrs., sear, add bone broth to 2/3 full, braise for 2+ hours on low...stovetop or oven. Cook down liquid, remove meat, add more broth, cook some more, then add cold butter while whisking the sauce(?). I bought the meat to make the recipe, can't wait! Thank you! ❤

Emma's skin looks amazing! You can tell she's back on Carnivore again. I know the first thing I notice when I accidentally (or on purpose) eat something toxic (seed oils) or carby (too much cheese?) I get skin issues on my face. LOL But the girls look great! :)

Carnivore restaurant has been a thought of mine for a while, but can you imagine the vegan protests you'd get? haha, be great publicity. but, a better idea from all these interviews you must have got some different tips from people. so maybe put together a carnivore recipe book? could help fund the documentary.

Love bone broth. A generous helping in hot water, with a generous shake of turmeric and pinch of cayenne with a tablespoon of butter. Great drink first thing in the morning. 👍

Epimysium, or fascia membrane, is what surrounds the beef shank~ though some group all surrounding membrane into the silverskin category, but it's not the same imho. Loved this clip~ can relate to so much of what MiMi's saying here, from cooking style to feeling like rote memory was slipping, though different situ for me & no actual diagnosis. SO truly thrilled for you MiMi~ there are no words to express the joy at every new day, wow~ the gratitude itself is impossible to express sometimes...I sure keep trying though. That's almost exactly i make my shanks, in cluding the dry brine. I also use fat from chuck roasts I made before. Yup shanks are one of my favorite meals as well.

I will definitely have to try shanks. I never have cooked them or even ate them. Also I love to hear that, Mimi uses all aspects of the meat juices and fat. Nothing's wasted.

Oh my goodness!!!! Just took the shanks from the oven and the meat is so tender and delicious! I added some marrow bones that I had in the freezer. Going to use all the bones for some broth.

Growing up, we said the same prayer...only it was " Come, lord Jesus, be our guest and let this food to us be blessed".

5:23 I used to dry brine my steaks All the time. I would dry the steak with a few paper towels. I would generously salt the steak on all sides. I would use the rock pink Himalayan salt in a grinder and I would use the biggest grind. Then I'd put it on a rack, and stick it in the fridge. Most of the time it would be for 24 hours. Sometimes, I'd do it for 8 hours and other times for just one hour, never less than 1 hour because you want to give the steak time to resoak all its own juices, then dry. If I were to only do it for one hour, I'd leave it out on the counter and not in the fridge. The longer you leave the steak to dry, the better. BUT, if you're sensitive to histamines, I would not suggest doing this at all. Well, not unless you have a histamine block supplement.

I throw beef shanks or soup bones into my crockpot with some onions, hot sauce, salt & pepper, and a tiny bit of water and let it cook on low over night. Delicious meat and broth in the morning. We love it. And it's cheap eating.
