55gr of carbs is a bit high, and def. NOT classified as "low-carb". Also the graph lacks important information, like for ex. what was the duration of the 15mg/dl spike? It might have lasted 1-2 hours or more. He removed the time at the bottom of the graph, and the duration is very important. The goal is not to have any bread, so that you DON'T spike your insulin and glucose, if you are insulin resistant.

I just want thank you as a nurse and as a woman who has gestational diabetes (I'm almost there!). They don't teach this in basic nursing school. I doubt they even teach this in medical school. As a diabetic, having the visual about how food combinations impact on glucose spikes is so important. This actually relief some of my anxiety about how to eat during my pregnancy so i can eat enough food and not having to resort to getting insulin. It was a hard journey, but your videos helped a lot. My doctors are amazed at my glucose control the whole time. Thank you.

Looks perfect! I eat exactly like this at breakfast, usually just a small snack for lunch (like peanuts, cheese, and dried fruit or a cup of cottage cheese with pickles), then I'm not starving at dinner and eat a "sensible dinner" as they used to say. I believe the key is to eat most of our fat and protein in the morning at breakfast, and low carb, and we feel great all day long! No blood sugar rollercoaster that we have to chase all day.
