If you like pulled pork Bev, try your ham to make it. I discovered using leftover ham to make pulled pork when my sons were late getting home once. I didn't want to waste over half a ham so I threw the whole thing in with the spices for my pulled pork and a bit of BBQ sauce. It was delicious.

LMAO!! When My son Briar was 2 ( 24 years ago now) I showed him peas in the pod off the plant..he was excited because it was like a little present..I never got to harvest much...because once he figured out that there were raw peas in those fat little pods he was off and running! I would be weeding the garden and he would keep bringing me pee pods and asking me to open them for him..he would say " mum Open d door" After about the third time..he just started chewing the4 pods and spitting out the fiber! I didn't care..it kept him busy and it was nutritious! I planted peas for him until he was 5 or so..then I stopped! lol

I am going to be doing the same soon. I have a of chicken leg quarters (30 pounds), probably about 30 pounds of ground beef, and who knows how much in ham, pork chops, ground pork, a turkey breast, etc. that I need to cook and can! My daughter is having a cow butchered this fall and I am going in half on it so I am going to need the freezer room!

A year ago I did this! I love having all that canned meat. And a couple months ago I canned 75#'s hamburger. Bev, have you ever used your ham & broth to can up ham & beans? Our favorite ....to the ham & broth I add my chopped veggies & 1 cup dry beans. Amazing

the broth added to the jar along with assorted veggies and meat makes a pretty decent heat to eat soup. With the gelatine you add a jars worth of water when heating up so a pint makes a quart of soup. I mae the soup bland because I dont know where it is going to end up. I send the jars to the sick elderly or infirm as long as they promise to call me to come get the jar back. with red and green bell pepper celery carrot potato onion garlic added bland doesnt equate without flavor.

I love all your canning freezer meat videos. I must get going on canning turkey leg and thigh meat. After processing I sectioned them. We decided to cook, grind then can the meat. Would you cover with turkey broth or dry can it?

I have a freezer full of meat left over from our pig roast. I was all cooked and cut I to large chunks (like steak size) and frozen in a large block. I'm trying to thaw a block now to can it. Can I put it in the pressure cooker to help thaw it or would that make it too tough being twice cooked and then canned?

I have to admit I've gone by what others have said for our sea elevation and not paid close attention to it. Well because you mention it in your video I checked online. I'm good at 899' BUT what I also noticed is they say if your over 1000' you also need to change the cook time of a hot water bath. you know I don't remember anyone in videos talking about that. IF YOU COULD PLEASE MENTION THAT in future videos I think it would help people.

It looks like you pressure cooked the pork twice. Is that the equivalent of hot packing the meat?

No...because cooked meat does not have to be hot packed...I heated the broth only to make it liquid again!

@@OurHalfAcreHomestead - Didn't you put the meat in a pressure canner, let it vent for ten minutes, put a weight on the vent of the canner to build pressure in the canner, then let it stay at that pressure for 90 minutes? That's also what you did when you put that same meat in jars. Sounds like twice pressure canned to me, but only once inside jars.

Great stuff! I don't eat much in the way of pork anymore, but I make chicken stock every two weeks or so. Perhaps it was due to it being pork, or due to the amount of bones you had in the pot, but with chicken, I could never have that luck with the cold fat skimming. What are your experiences with different fats, in that regard? My mother always insisted on a gas stove (in case of power outages, though we also had a woodstove), and used that kind of pressure cooker. She was a fantastic cook, and never had a problem with her own pressure cooker. But because I'm one person with limited space, I don't do canning. I use my 8qt Instant Pot for recipes, but it doesn't compare. I can't wait to have a house with a basement...because I'll definitely be installing a stove and sink down there for just this purpose! I always enjoy your work here. Thanks for sharing!

Well my dad cooked with a pressure cooker when I was young..so I know it could be doen..and originally my very FIRST pressure canner ( 25 years ago now) Had instructions for cooking AND canning so It was a no brainer for me! When meat is frozen (I have several videos on canning up meat from the freezer..whole turkeys even)

Keep in mind a canner isn't just a pressure canner, it's a how water bath and a stock pot. Often at rummage sale you can pick them up for 1/10 the full price.
