Bless your soul for uploading this to KZfaq! She was one of a cadre of chefs who revolutionized American cooking, bringing classic French cuisine into the mainstream culture of her time.

Wish the Dionne Lucas cooking shows were on KZfaq. She had the classic training as a French Chef. She came before Julia and was the first woman to go to and complete the Paris Cordon Blu Cooking School I think.

Always loved the opening theme. So cheerful, and vintage sounding. Makes me nostalgic for a time period that I never got to live in...Was born a little too late!

She was right, that the U.S. didn't have very many varieties of apples (in the post-WW2 to 1970). Now its common to find Cosmic apple (a new variety), Gala, Ambrosia, Pink Lady, Honey Crisp, and Granny Smith (a variety originating in New Zealand). Sometimes I cannot find my favorite all-around apple Golden Delicious, and the Red Delicious is mostly unavailable due to its unpopularity, though these last two kinds were the most common kind when I was a kid, probably because they transported to market well. MacIntosh is what she uses in her recipe here, which is hard to find now, though it is an excellent baking and cider apple variety. In the Pacific NW of the U.S., there are dedicated apple tree enthusiasts who maintain heirloom and forgotten apple varieties, growing in their small orchards, selling apples at farmers markets, hunting down old apple trees on abandoned farms.

I make simple egg custards frequently. Its my favorate. That apple custard looks yummy. I must try that one.

Notice that she said the entire word, not dropping a syllable! CarAmel, not carmel as so many Americans pronounce it! I just love watching these episodes, I wish I could have met her, unfortunately born too late to make a trip to her book launches etc. ❤️
