I always cook caramel, I add in 1 Tabsp water in the sugar and don't stir to let it burn over medium fire, once change colour then stir until golden, don't burnt it, then add in the coconut milk slowly ( for other recipe, I added in water ) but must be careful as the caramel is very very hot ! She stated 50 gm sugar for the caramel !

Am amazed with the easiness to home cooked kaya. I have some questions: 1) How long you stir and cook? Used high heat all the way? 2) Can I use those packet coconut milk or must I get fresh coconut milk. TQ

dot phang all the way use low heat to stir ,about half and hour . Fresh coconut milk is more fragrant than packet coconut milk
