Maccheroncini with traditional meat sauce is a dish cooked during the Feast of Saint Patrick, patron saint of Campofilone and served on large wooden boards. Today I teach you how to prepare this dish at home.

Maccheroncini of CAMPOFILONE IGP - 200 g
Various cuts of meat: Muscle on the bone, Sausage, Rose, Pigeon, Pork ribs, Pork loin - a piece of everything
For the tomato sauce: Celery, Leek, Copper onion, Carrots, San Marzano peeled tomatoes
Extra virgin olive oil from Campofilone monocultivar Carboncella
"Rosso bel Poeta" Piceno red wine (Marche)
Salami "Tenuta della Marca" a piece to make an aperitif
Pecorino and Parmigian to be grated
