Chicken with broccoli in a brown sauce is my favorite go-to order from Chinese take out. But I prefer Chinese take out at home. It's hard to find a good one so I end up making it myself. It's basically a chicken with broccoli stir fry just like they do in the restaurants except adapted for a home kitchen. We're using soy sauce, oyster sauce, rice wine vinegar, sesame oil all the flavors a Chinese restaurant is using, just doing it all at home. I'm gonna show you how to make homemade Chinese food as food as anywhere in hopes that you can save a few bucks this time of year.

My family (Taiwanese) taught me to peel/skin the outermost layer of broccoli because it's a bit tough. I know that adds a decent amount of work but makes it easier to cook and become tender.

I made something similar to this a week ago and it blew my mind. I marinated the chicken for about an hour in soy sauce, sesame oil and blackberry balsamic vinegar, with some honey, red pepper, minced ginger and garlic. Then I braised the chicken in the sauce while it reduced. I added in some green bell pepper and onion and let those get tender before pouring the entire thing over some fresh rice. Da...bomb.

Delicious. When I lived in NY, there were plenty of good Chinese restaurants, but here in California I go to Thai or Korean, the Chinese food is not the best. Thanks to you, that's not a problem anymore.

the great thing about this dish if u ask me is that no matter what it pretty much comes out solid..i tried thsi recipe several times fried and not fried....i feel the fried method is the best flavor wise....recently i didnt have anymore chick stock , scallions or corn starch. instead, i used water & adobo, red onions and coconut flour (instead of corn starch).i overdid it a little with the adobo but outside of that it was very solid

Yesterday I watched your scampi video at 6:30 a.m. and wanted scampi all day. Now it's 5 a.m. and I want chicken w/ broccoli in garlic sauce! (And believe me, after 27 years in the NY Tri-State area, I have not found good Chinese food in Wilmington, NC!)

I started doing this at home a while ago because while I love Chinese-American food, it’s usually always crappy, cheap fast food like he said. I make this sauce but I add 3/4 to 1c of fresh squeezed orange juice to the marinade.

Love doing Chinese at home, and this looks really good. Definitely going to try it soon. I feel you on finding good spots to get it out. The couple of excellent Chinese places in my area are packed with a long wait every night of the week. You have to plan ahead and be ready to make a night of it. But there's just something about having it at home...especially this cold time of year for some reason.

Shaushin cooking wine, egg and ginger is what you are missing during the velveting process. Then typically you blanch the meat first. Let it dry then fry it. That's how high end Chinese restaurants get that super smooth, tender and velvety texture. Same thing with beef.

Okay, so clearly dude is a chef. His knife skills when slicing the green onions was a dead giveaway. I thought he was just a guy at home who could cook everyday meals. Either way this is a recipe I must try. After watching this video I am almost embarrassed to say the only time I have made Chinese food was orange chicken from a Trader Joe's frozen food kit. It came out delicious, and only required me to use the oven. (Whispering: I microwaved my rice for 90 seconds) This meal looks delicious! I enjoyed watching.

NOT ANOTHER COOKING SHOW -- Me too, but grated ginger fried on high heat in sesame oil is another thing altogether. See my comment on that. I’m that Asian guy who hates ginger but uses grated ginger in my cooking. Just a small knob -- say the size of your thumbnail -- makes a heap of difference and you won't taste that usual gingery taste which you don't like. It won't be there. 8-)

For better flavour, try heating up a small quantity of sesame oil, then fry the grated ginger till the fragrance can be smelled, them add chopped garlic and fry for 1-2 more min -- everything is done on high heat, with you giving the occasional stir while frying (hence the term stir fry). When that base is done, then you add your brown sauce mix and go with your recipe. The umami flavour you get from frying grated ginger and garlic in sesame oil (on high heat) is one of the secrets of Asian cooking. 8-)

I have tray making Chinese lo mein at my home set up (electric stove). Many different recipes and I have up. Lot of people said you need a powerful gas stove and a seasoned wok as chinese restaurants have. The closer I got is stir and frying every ingrediente separated. But not the same at all... What do you think?

You gotta get a carbon steel wok; makes a big difference because of the heat temp, and time of cooking. They’re pretty cheap I think mine was 30$ on amazon.

You could just marinate the meat in chinese wine soy 1 tsp corn flour pepper for 30 mins. Seal the meat, add in chopped broccoli garlic ginger spring onion, oyster sauce maggi seasoning sesame oil and voila job done

in my Chinese restaurants, the sauce is really dark. I wonder how do they do it? Anyways, your recipe looks nice, i'll try it

They most likely used dark soy sauce, hoison sauce or oyster sauce.

How long do you cook the sauce before you throw in the slurry? Once that slurry goes in it thickens up FAST for me. Turns out good. Just wondering if the sauce should be cooked a little more/less before the slurry. What I'm afraid of is it's going to get too thick before the chicken cooks throughout.

Cook until the chicken is cooked through but you don’t want to broccoli to cook too much. So it’s a bit of a time management game. Try to find the right time for you to add it. It will be different depending I. Stove conditions

Please mention to always use a light soy sauce when cooking. I've ruined a few dishes because I used kikomin, but that was 20 years ago and some people just dont know the difference.
