It appears that your knife is an OLD friend of yours ; ) Is it actually a (bone chopping) "cleaver", as you stated, or a Chinese vegetable knife?

Leeks have a different taste, but if you like leeks, why not. Just make sure they are sliced very thin and chopped small.

@@SammyWongsKitchen Thanks, btw I try to mix the mix sauce but at very high heat I think the sugar caramelized too quickly and sticky at the bottom of the Wok, imho maybe I preferred mix the sauces without sugar and mix the sugar, salt and white pepper at other mix seasoning...

@@yannote8302 The stir fry sauce is at the very end just to coat the stir fry ingredients and thicken the sauce. You could even turn the heat down slightly for this part.
