Chinese Style Fry Chicken
Chinese style fried chicken is also called Soy Fried Chicken. The chicken is marinated and boiled in a mixture of soy sauce and water. The cooked chicken is then fried in oil to give you a fried chicken with soy taste.
For the brine:
brine 3 chicken leg quarters in brine with the following ingredients:
5 cups water
2 tbsp. salt
2 tbsp. sugar
let chicken soak in the brine for 2 hours to give the chicken some flavor
For the broth:
Star Anise
Black pepper
Chinese 5 spice
All purpose seasoning
Sugar
Cayenne pepper
Fresh ginger
Spring onions
Soy sauce
for the sauce:
Chicken broth
Oyster sauce
Sesame Oil
Soy Sauce
Sugar
Corn starch for thickness
