My family and I are having to isolate over Christmas with a positive Covid case (like many families are I'm sure!) so to lift the spirits I cooked up a Christmas ham over a fire. (You might hear the family in the background, it was very hard to get them to shut up...)
Ham is super easy, simply boil it in a large pot with bay leaves, cloves, peppercorns, garlic, shallot/onion, carrot and celery till cooked through.
Then score the skin in a crisscross pattern and push a clove into each diamond shape, glaze with a marmalade, sugar and mustard mix and suspend it over indirect heat to let the glaze set.
Then enjoy it over the next few days!
