In this video I show a couple of classic Swedish food recipes that we always prepare for Christmas.
Swedish meatballs, pickled herring and knäck (butter scotch) candy! We also check out the performance of my new skillet or prying pan!
Meatballs recipe:
1 dl breadcrumbs
1 ld milk
1 egg
2 allspice corns
15 peppercorns
1 onion
1,5 teas spoons of salt
500g minced meat (50:50)
Pickled herring:
1 dl vinegar essence 12%
2 dl sugar
3 dl water
About 1/2 table spoon of allspice
About 1/2 table spoon of yellow mustard seeds
2-3 bay leafs
1-2 red onions
Salted fillets of herring 400-500g

2 dl Cream
2 dl Sugar
2 dl Ljus sirap (Golden syrup or light treacle)
50g almonds

When I was young I lived in the state of Georgia and had elderly Swedish neighbors across the street. She used to make me Swedish meatballs all the time. I'd pester her every other week about another batch, and constantly begged her to teach me how to make them. I was only about 4 or 5 at the time and I never learned how. They wound up moving back to Sweden and we moved to Pennsylvania shortly after. I have never had Swedish meatballs as good as the ones she made ever since, it's been nearly 20 years!

There are, of course, thousands of family variations of the recipes, but I'm so glad to see allspice being used,in meat balls, because I've only ever known my dad and my grandmother use it, and it's the best (IMO).

I can highly recommend the pickled herring. First time I tried some was on a TetraPak training course in Lund. And with all the sweets I can see why Sweden is happiest place to live in the world. Happy Christmas to you and your family and to all your viewers

Super recipes. All make my mouth water. Here is some help for US viewers. 12% vinegar may be hard to find, so the more common 5% white vinegar may be substituted thusly: 1 dl (100 ml) 12% vinegar = 12 ml acetic acid. 12 ml acetic acid ÷ 5% = 2.4 times as much 5% vinegar needed (easier to find in US. Stores). So, 2.4 dl (240 ml) of 5% vinegar needs 0.6 dl (60 ml) water to make the same concentration of acetic acid in the same amount of liquid.

The vinegar is pretty confusing to me... Vinegar is not the product you want. It should be only acetic acid/vinegar essence. My understanding is that vinegar essence usually comes even stronger at 24%, but that is easy to dilute!

@@torbjornahman In the US you can get vinegar in strengths as high as 80 or 90% acetic acid although it is usually considered to be a cleaning compound at that strength. If it is a distilled vinegar there isn’t much in it besides acetic acid and water. “Essence” just means that it is stronger than normal 5% vinegar.

What I have discovered is whenever I watch Thunderbear I tend to binge a lot of his older video's I really love watching this guy he's very fun to watch but I enjoy you more when you give more of a narration of what your doing rather than doing it hearing your voice is very soothing and calming. "Decilitre" is not a measure we hear often in Canada, even though we have our fair share of the metric system. So one decilitre is 100 mL, or 3,89130E-12 x 213 semisolid fluid avoirdupois ounces, for you Americans.

Love seeing your family get involved and i love to see you use a pan you have made to cook the food ! Great to hear you speak ,whish you did it more -even if only to explain or to interpret Swedish to your viewers - i watch a channel called the post apocalyptic inventor who does a lot of German to English conversion and i love it .
