Always scoop out the shallots 2 shades lighter than you want them to be. Also, high (highest you can go) fire in the beginning when driving the water out, low fire in the middle and end with high fire for 10 seconds before scooping the shallots out.

Nope, fried shallot is vital in vietnamese cuisine not in indonesian cuisine.
