As a guy who smokes racks of ribs for hours and hours I wanted to say no to this vid but I stayed for the music and ended up thinking I'd try this but with "country style ribs" (pork shoulder cut into rib sized pieces). Thanks for sharing this.

Those who smoke or grill ribs remove that membrane to permit smoke, spices and juices to make contact with that side of the rib meat. If it's left on, the ribs are essentially sealed on one side.

I think you need to try some Authentic Southern BBQ. The ONLY way to eat ribs of any kind that actually showcases the meat instead of a bunch of other ingredients is to cook them low and slow. I have NEVER heard of anyone pan frying ribs among the zillion other veggies added. They are put in a smoker with NO grease just allowed to cook for hours and hours. The only ingredient needed is BBQ sauce.

A few years ago I moved to the South, well, it's sort of the South--northwest Arkansas--and have been enjoying ribs here more than I used to on the West Coast. I'm sure how it's done here is the best, but I'd be willing to try parboiling my ribs (as seen in this video), just to see if it makes 'em less greasy, and it may or may not turn out that that "new" taste is actually better. Probably I'd try a few, then add a greasy BBQ sauce to 'em? Who knows. Also, adding a breading to my ribs? No. That just seems wrong. I'll let somebody else do that, then try theirs. Probably never bread my ribs at home.

Instead of boiling the ribs just to get the membrane off is simple... take a thin sharp knife and get under it to pull it up then grab it and pull..it comes right off..or you can make slits across the membrane and marinate them in a mixture of your seasoning ,Apple cider vinegar and beer refrigerated for at least 36 hours... Pull the ribs on the charcoal grill, hickory and mesquite wood and cook low and slow...talk trash with your buddies and have a beer or two... that's old school that has never failed...boiling,frying in butter and oil??? Not one ounce of homemade BBQ sauce... however I did like the slaw...

Ive never been able to understand why people boil ribs! You boil the flavor out and turn the meat to mush. Not sure about boiling and frying them, but no thanks. Ribs are made for smoking and BBQing without ever boiling. As for taking off the membrane, insert a steak knife under it, lift and pull it off. Works every time.
