We actually got us some beneficial rain right at the hottest part of the day today, and the temps dropped us from the mid-90s to the upper 70s. Love these little blessings. I'm pretty much a fan of anything with cornmeal, and I especially love cornbread. We need more great recipes like these. I'm sorry for the folks that don't get to experience these great southern traditions.

Hey Tallie Faye Made this and took to my knitting club. Everyone had reservations about tasting it. All were surprised that it’s delicious and all the ladies wanted the recipe. I like to add crumbled bacon at the last minute before serving.

I love cornbread salad. I use sweet red bell pepper instead of jarred pimentos, but I swap the green bell pepper for canned green chiles. Sometimes I toss in a can of Mexicorn, too.

Bacon crumbled in cornbread salad is good, and pinto beans and shredded cheese.

We do the Mexican cornbread salad.. just add rinsed/drained black beans and drained corn.. I use half Mayo and half sour cream with a couple tablespoons taco seasoning.. add extra cheese.. I also prefer to mix instead of layer 🤤

I LOVE your Corelle dishes! My mom had those and many a delicious Sunday dinners were served on those!

Yummy! We love cornbread salad. I put cumin in my cornbread or sprinkle on after it's cooked. I use drained rotel and rinced chilli beans and bacon and mexicorn, then all the other chopped veggies that you did. Top with cheese and homemade ranch. It's kinda like a Mexican cornbread salad.

We sprinkle a little crispy fried bacon on top of ours. Love cornbread salad. Yours looked Devine.. love you from southern mississippi.❤

Hi Talli Faye I can see this being a depression era recipe ! I’ve seen Cornbread salad made using the chopped peppers, and green onion or reg chopped onion also , and frozen corn ( steamed in microwave ) frozen peas. ( uncooked but defrosted ) , pineapple tidbits or chunks , and the shredded cheddar cheese or in little chunks and mayo ! I’ve never tried it cayse I thought I wouldn’t like it but maybe I will try it now , next time I make cornbread I’ll take a little Abdul mix up a few veggies in it with mayo and see if I like it ! My mom would have LOVED this. She loved everything cornbread, made it all the time, and I grew up on it! She even used to make cornbread muffins with jalapenos; in fact I'm going to make some tomorrow. But her favorite was to break up cornbread when it started getting dry, put it in a glass, pour milk on it and eat it with a spoon like a corn bread float!😀❣🌽🍞

I sometimes add shredded cheese and bacon to mine. I know you said you don’t. We also us Duke’s lime flavored mayo.
