Agreed... the only time I buy skinless/boneless Chx is for Chicken Kiev or Chicken parmigiana. It is the hometown beauty queen of dietitians... made popular among that crowd but no real personality and is only interesting by what surrounds it.

I wanted to make something different for my husband's lunch today. This caught my eye and I could not be any happier. I played a little (your recipes are most always spot on) by adding white mushrooms and extra garlic. When the chicken was done, just put it on a heated plate and reduced the garlic/mustard/lemon and balsamic to a nice (but not too thick) gravy. Thank you Chef John to taking the bland and turning it into some great.

How cool, I'm just scoping your channel for something to do with chicken I took out of the freezer for dinner tonight, and found this recipe. I recently found a random recipe online for fish where you do basically the same thing, except the "glue" goes right on the raw fish since fish cooks so quickly. It's all in the oven, and I actually just made it last night with mahi mahi, and it was incredible - everyone raved. I didn't think to do the same method with seared chicken, but now I'm going to. I get creative with the glue for the fish, and I think chicken is even more versatile - love this method!

-I- -will- -try- -this- -with- -Quorn- -soon- ... I _did_ cook this with Quorn filet tonight. A successful recipe. The trick is to boil the Quorn in stock, which makes it succulent. Quorn can otherwise get dry if you fry it. I then strained the broth and added it to roux and cream to make a sauce.

If you never want dry chicken breasts again, just make a quick easy brine with 1/2 gallon of water, 1/4 cup salt and 1/4 soy sauce and a little bit of brown sugar. Do that the night before you cook them and just put everything in a 1 gal ziplock. Even thrown on the grill they come out amazingly juicy. Do that, then prepare them this way...would be amazing! Another awesome looking recipe.

Korean dressing part gave me a chuckle. It's delicious and it's the only dressing we put on our salad (usually JUST the lettuce or JUST shredded cabbage.) It's super easy to make too! First you put on some pants, drive or walk to the grocery store of your choice, go to the condiment aisle, and grab a thousand island dressing. OH you gotta pay for it too. Can't just leave the store with an unpaid for salad dressing like an animal.

Made this tonight! Very very good! The only thing I would do different next time is a little more Cayenne or maybe chipotle and I would use smaller breasts. The ones I used were jumbo double D’s! It took longer for them to get done in the middle and they just seemed a little too thick. “TIP”... if the meat is not done in the middle and the bread crumbs are starting to get to brown, Lay a piece of tinfoil over the chicken breast for the last few minutes until it’s done And don’t skip on the pan sauce! That was very good. Thanks CJ!
