This is what Ramen-Master and owner of the restaurant Ufushin in Sendai truly believes. This philosophy of healthy Ramen can be seen throughout all the foods that Chef Hayasaka-san serves. His dedication to creating food that echoes the natural order of evolution, particularly drawing inspiration from the deep ocean and how it can utilized to bring health to people of all ages.
To put this philosophy to the taste test, we tried his Zaru Chuka, a form of cold soba dipping noodles found often in the northern regions of Japan, and believe us when we say that this does not disappoint! It even converted diehard Umeboshi hater, Anthony, into confessing the delicious flavors that are in the pickled fruit!
