Recipe 👇 - 2.2kg plums - 1kg sugar - 5.5l water - 5g wine yeast - remove the stones of the plums and add to a fermenting bucket with the sugar - Whack with a rolling pin till the sugar is dissolved and a nice syrupy consistency - Leave in a warm place for 3 days, stirring occasionally - Add 5.5 litres of cold water and mix together - Add 5g wine yeast and stir - Leave in a warm place for a week stirring daily - When it’s all bubbly (this actually took 10 days for me because the house was so cold!) strain out the solids - Add the liquid to a demijohn with an airlock and let ferment for a few months, till bubbles stop appearing Step 2 - rack the wine into a separate demijohn and leave till it turns clear ish - Decant into sterilised bottles and let sit for 12 months before enjoying! The hydrometer estimates it will be about 14% once it’s done fermenting, I’ll check again when I rack it though!
