Dimer kosha | Bengali style egg fry. This is the Bengali version of egg fry (Dimer Kosha). Dim (pronounced deem) means egg and kosha refers to the style of cooking spices, meat, etc in low flame for a long time to get out distinctive flavours. This recipe gives a thick, fragrant, spicy gravy coats the eggs and potatoes and goes well with poori and rotis.You can add 250 ml water at the end and cook for 5 more minutes to get a milder gravy (dimer dalna) to serve with rice.

1. 4 eggs, hard boiled
2. 2 medium sized potatoes, cubed
3. 2 red chillies
4. 1 tsp jeera (cumin) seeds
5. ½ inch cinnamon
6. 4 cloves
7. 1 bay leaf
