It’s a very dense cake. I think there isn’t enough baking powder in the recipe to cause it to rise. There should ideally be 1tsp BP per cup of flour. Lack of enough baking powder has caused the cake to be doughy and chewy without much rise. It has a tight cake crumb and after chilling, the butter in it solidifies causing it to lose some of its potential softness. All in all, will try the cake again with some tweaks the next time. Removing the melted butter for oil and using more baking powder. Not happy with the texture of this cake - isn’t cakey at all. Such a shame coz I was looking forward to it.
