Ooty is cool and nice whole year. But my favourite time is in winter - October to February. The chill will be more, the mists and clouds on the mountains make everything look much better than in summer.

Yes you can. Make sure that the pan is very hot so that you get that grilled effect. Arrange all the veggies in a single layer. Do not move them till they are nicely done and got some char marks on them. Then flip them over and do the other side similarly. Do not cover the lid. Take care not to burn the bottom.

The way you delivered your explanations only compliments the vdo. I am attracted and interested in people like you who has a good grip of English, devoid of the twang. It’s a very dense cake. I think there isn’t enough baking powder in the recipe to cause it to rise. There should ideally be 1tsp BP per cup of flour. Lack of enough baking powder has caused the cake to be doughy and chewy without much rise. It has a tight cake crumb and after chilling, the butter in it solidifies causing it to lose some of its potential softness. All in all, will try the cake again with some tweaks the next time. Removing the melted butter for oil and using more baking powder. Not happy with the texture of this cake - isn’t cakey at all. Such a shame coz I was looking forward to it.

This is a good time to travel. Weather will be mild, not too cold. Just check about rain conditions and other covid restrictions before you travel.
